Sun and sea imbue this unusual combination inspired by the cooking of the French Riviera. Louise Lamensdorf, the chef and owner of Fort Worth’s Bistro Louise (2900 S. Hulen), has deconstructed that region’s seafood-rich bouillabaisse to create a trio of dishes that are at once familiar and modern. Lobster and saffron, rather than being stewed together, are smoothly folded into mashed potatoes. Aïoli is turned a vivid green by the addition of fresh spinach. And salmon, hardly Mediterranean, is marinated with mint to give it a Provençal spin. Taken together, the three both honor the old ways and turn them delightfully askew.
