Sea You Really Soon

Superchef Stephan Pyles, the culinary hand behind Dallas’ Star Canyon, is opening a new restaurant this fall: AquaKnox. The name refers to the street on which the restaurant is located, Knox, and the menu’s featured ingredient, which comes from the water. “It’s a fish restaurant,” he says simply. Pyles plans to offer his self-styled “global water cuisine,” a cosmopolitan collection of seafood influences that focuses on the cuisines of Asia and Latin and South America. Will hungry diners take the bait?

Grady Spears, whose cowboy cuisine fills the dining rooms of Reata restaurants in Alpine and Fort Worth, reports that he plans to expand—but not to London, as he had originally hoped. “We raise a lot of our own beef,” he says, “and we were going to have trouble getting it into the U.K.” So he’s looking to San Antonio or Dallas instead. He hopes to open a new Reata within a year; whichever city serves up the perfect location will rope him in.

Expansion plans are also in the works for Las Manitas, the casual Austin cafe whose customers run the gamut from local musicians and Texas politicians to Hollywood movie stars. Within a year co-owners Cynthia and Lidia Perez will open a combination taqueria–juice bar–coffee shop two doors down. This is nothing short of a revolution for Austin’s power lunchers. Down with sweltering on the sidewalk while waiting for a table! ¡Viva los tacos!
