La Niña seems to have decreed that much of Texas will have another unseasonably warm December, but you can boost the chill factor by creating a wintry tableau on your holiday table.

These clever gingerbread trees from pastry chef Dwayne Fortier at La Réserve at the Omni Houston Hotel (4 Riverway) can be as simple or elaborate as you wish. Leave them bare except for a smattering of faux snow, let the kids have their way with them, or doll them up Martha Stewart–style. An ice cream base and a berry compote round out this edible winter wonderland.
