1 cup sake
1/2 cup red-wine vinegar
1/3 cup low-salt soy sauce
1/3 cup balsamic vinegar
2 tablespoons very thinly sliced ginger
2 tablespoons very thinly sliced garlic

Place all ingredients in a large sauté pan and simmer until the liquid coats the back of a spoon, 20 minutes or more depending on size of pan.
