At the annual Dallas Wine and Food Festival, held in March of this year, one of the most exciting events was the Rising Star Chefs’ Contest. This competition seeks out and recognizes up-and-coming culinary talent from the Dallas and Fort Worth area. As the final step in the process of elimination, sixteen contestants (who had been narrowed down from approximately two hundred entrants) were asked to prepare original recipes that would pair well with two designated wines, both produced by the Chilean winery Casa Lapostolle, a principal sponsor of the festival. The white wine was Lapostolle’s “Cuvée Alexandre” Colchagua Valley 2000. The red was Lapostolle’s “Cuvée Alexandre” Casablanca Valley 1999. Here are the winners—one for white wine, one for red.
