TEXAS MONTHLY SAYS: 2008: Be advised: To-go orders are identified by the color of the diner’s vehicle.
There’s no glitz at this eleven-year-old walk-up two blocks from the courthouse. But there’s plenty of great barbecue, from the monstrous pork ribs to the flavorful sausage that shines with the thick, smoky sauce (owner Wayne Ooten and his son, Kevin, worked on this recipe for more than a year before opening and declined, at first, even to share the secret ingredients with Mrs. Ooten). Most locals order their food to go, but if you’re lucky, the lone picnic table out back beneath an enormous pecan tree will be free.

BBQ SNOB SAYS: 2008: In a shack that serves to-go barbecue only comes forth some of the best meat in the region. Orders are given at an outdoor window to the somewhat confused staff. That may be an unfair assessment, but this place has not been used to the level of business it had on this Saturday morning. It took nearly fifteen minutes to receive a simple two-meat plate, but it was worth the wait. The ribs were large and meaty with a nice crust, good tenderness, and well-rendered fat. The flavor was excellent, but the smoke could have been more potent. The sauced brisket had no crust or smoke line and seemed to have no rub. However, the smoke flavor was still present.
