Hulen), has deconstructed that region’s seafood-rich bouillabaisse to create a trio of dishes that are at once familiar and modern. Lobster and saffron, rather than being stewed together, are smoothly folded into mashed potatoes. Aïoli is turned a vivid green by the addition of fresh spinach.
