In barbecue time there’s before, during, and after. Before our meal at Cousin’s, we studied the brisket’s thin, dark crust. During our meal, the smoky taste made us lose track of our other senses. Ribs were rich. Sauce was tart. Sweet beans really were. After, we wondered where the time had gone.

(From August 2009) The nicely seasoned half pound of meat is smothered with a pile of blue cheese and a tangle of bacon. A goodly spread of chipotle mayo bridges the flavors, and fresh toppings seal the deal. The fries are fresh-cut and sprinkled with sea salt, and that just never, ever gets old. The high-ceilinged cafe and beer bar is named after Leo “Dutch” Meyer, a TCU grad who became the most successful football coach in Horned Frog history.

(From December 2009) After the compulsory handshake from the owner, we joined the throng waiting for a table. Soon enough we were sipping margaritas and munching tostadas with fiery salsa. A complimentary bowl of beans tided us over during the short wait for our Tex-Mex plate—three (beef, chicken, or cheese) enchiladas anointed with chili con carne and melted cheddar. The kitchen now offers fish tacos (two flour tortillas stuffed with fried perch and served with pico de gallo, slaw, and guacamole), but the wise stick with the old standbys. Bar.

For the burgers, the meat is half tenderloin, half brisket, and all ground fresh daily. Try the Dirty Love: lettuce, tomato, pickles, American cheese, bacon, a fried quail egg, and Love Sauce. Limited indoor seating is available, but the patio is your best bet, with its stage for live music and people-watching. Bar.

(From August 2009) Lest you forget that a burger is above all a beef product, there’s the Dirty Love Burger at the Love Shack, a weathered open-air music and people-watching venue located in the Fort Worth Stockyards. Only in Texas would anyone grind together tenderloin and brisket, but the blend yields such an excellent ratio of fat to lean that it will gladden your taste buds. The whole barnyard participates in this mouth-pleaser: It not only comes with crispy applewood-smoked bacon but also a fried quail egg clinging to the patty. The tangy, house-made Love Sauce fuses the whole thing into a glorious mess you won’t soon forget.

(From November 2009) Daniel Badillo and his wife, Rose, picked up the 7th Street Station Grill, moved it next to the Leonard’s Department Store Museum, and gave it a new name. Now customers have access to a fun gallery of memorabilia from the old Leonard Brothers’ retail venture along with a tasty roster of burgers, fries, and milk shakes. There are salads too (we like the Subway Car Trio, with chicken salad, tuna salad, and a tasty cup of either chicken tortilla or tomato basil soup), as well as daily specials (we give the hand-breaded chicken-fried steak a score of 9.5).

(From October 2008) We like to dine alfresco at this casual seafood spot near TCU, and so do lots of locals. Our last visit started with nachos and margs, then moved on to entrées of halibut tacos—the fish crisply fried and tucked in among shreds of cabbage—and blackened salmon with a chipotle blue cheese glaze (phenomenal).
