Not new but definitely rejuvenated, Francesca’s is focusing on farm-to-table seasonal vegetables, meats, and seafood. A visit in early spring found morels and Senator zucchini on the menu, and as the season progresses, bountiful produce from Seguin’s Uncertain Farms should appear in the King Ranch–inspired dining room. Tender, rich antelope steak Diane and a standing rib of wild boar (pictured) from Broken Arrow Ranch were notable for their preparation and accompaniments—sauces with just enough zing, mesquite-smoked pear tomatoes, spinach oil with chile-infused heat. Additionally, you’ll find attentive servers, plus all the little extras, like a dainty amuse bouche, a flute of palo azul herbal tea between courses, and tiny cookies and guava sweets at meal’s end. Two of us feasted mightily on the grilled platter of sizzling, succulent entraña (skirt steak), boneless flat ribs of beef, juicy sausage, grilled vegetables, and roasted potatoes. And we still had leftovers. Undoubtedly the handsome space and warm service had something to do with the positive experience—that and a nice bottle of Malbec. Before we finished we had made up our minds to return to check out the likes of grilled sweetbreads, chicken milanesa, bacon-wrapped shrimp, and warm crepes with dulce de leche.
