Bill and Rita Clements’ Apple Cake

1 cup cooking oil
2 cups sugar
3 eggs
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon vanilla
4 cups peeled and chopped Granny Smith apples
1 cup chopped pecans

Preheat over to 350 degrees. Combine oil and sugar. Beat each egg in one at a time. Sift together dry ingredients and stir into egg mixture. Fold in vanilla, apples, and pecans. Pour into an 8 1/2 x 11 pan that has been sprayed with cooking oil and bake for 55 to 60 minutes, or until a knife inserted in the center comes out clean.
