Southwest Bistro’s Executive Chef Paul French at The Hyatt Regency Downtown creates a menu worthy of true love on Thursday, February 14th beginning at 5:30 p.m. In addition to a spectacular culinary experience, guests will have a romantic backdrop of one of the most scenic views in Austin. French uses locally-sourced ingredients to inspire a multi-course menu that includes a diverse choice of appetizers; coriander crusted pork belly, pan seared sea scallop, roasted winter squash soup and local farmer’s market ensalada. Entrée choices are equally outstanding and include chile and chocolate braised short rib, steamed sea trout and mussels, Richardson Farms chicken, or fire roasted vegetable enchiladas. For a truly sweet finish, guests can expect a decadent dessert trio that includes chocolate mousse pave and salted caramel popcorn, blood orange tart with basil macaroon and candied ginger and Sweet Grass Dairy’s Green Hill Cheese and Rose gelee.
