Mini Banana Muffins

Got this recipe over the internet and made them yesterday...really liked the muffins

 

4 large ripe bananas, mashed

3/4 cup of sugar

1 slightly beaten egg

1/3 cup melted unsalted butter

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cup flour

TOPPING

1/3 cup brown sugar

2 tablespoon flour

1/8 teaspoon cinnamon

1 tablespoon butter

Mix together in large bowl the banana and sugar together. Add the egg and butter. Mix until combined. In another bowl, mix together the baking soda, baking power, salt and flour. Add to the banana mixture. Place 1 tablespoon on mixture in mini muffing pan. Top with the topping that you have combined. I used about a 1/2 teaspoon on each. Bake 350 degrees for 15 minutes
