Sevy's Bitchin’ BBQ Sauce

Since there was a great wings recipe just posted thought I might add this to the pot. You can buy it at the restaurant, but they also gave out the recipe so here it is.

 

From Chef Jim Severson of Sevy’s Grill in Dallas

SEVY’S BITCHIN’ BBQ SAUCE

1/4 c. poblano pepper, small dice

2 TBL. garlic, minced

2 TBL. olive oil

1 TBL. salt

1 c. cider vinegar

1/2 c. brown sugar

3 TBL. chili powder

1/2 tsp. cayonne pepper

1/4 c. worcestershire sauce

1 qt. ketchup

1 1/2 c. water

In sauce pot, heat oil and saute onion, poblano and garlic until soft. Add chili powder, salt, and cayenne to "bloom" the flavors. Add sugar, vinegar, worcestershire and water. Mix well then add ketchup. Bring to boil, then lower to simmer for 45 minutes.
