Fried Suppli So Good

 

1 onion mince fine

3 c. x virgin olive oil

1 ¼ c. rice

½ c. dry white wine

4 ½ c. chicken broth heated

1 egg YOLK

½ c. Romano, parmesan, porcini or parmigiano reggiano cheese grate

Salt ñ pepper to taste

½ lb. mozzarella cut into 24 cubes

½ c. flour

3 eggs beaten

2 c. bread crumbs fresh

Using a skillet sauté onion in 4 tablespoons olive oil until wilted-add rice, cook 2 minutes, stirring. Deglaze with wine-till wine evaporates-start adding heated chicken broth, 1/2 cup at a time ñ cook stirring and adding more broth whenever it has been absorbed-about 20 minutes this takes or until rice is al dente.

Fold in egg YOLK- grated cheese, salt ñ pepper. Spoon onto a large baking sheet, letting risotto cool to room temperature.

Divide risotto into 24 portions ñ roll each into a ball..Insert a cube of mozzarella into each ball ñ reshape ball around the mozzarella,

Now U have suppli. Roll suppli or balls in flour, into beaten eggs ñ into the breadcrumbs.

Heat remaining oil to 350° F. in deep fryer or 2 qt. pot. Fry six at a time so they don't crowd-turning once ñ make them golden brown-about 3 minutes-remove with meshed wire or slotted spoon to paper towels.

Make sure oil is up to temperature again ñ cook remaining supplis

Serve hot with some spinach leaves on a bottom of platter or 4 small plates so they look like little oranges ñ serves 6 per person.

Note~ Using either fresh cooked rice or leftover risotto. Tasty ñ crispy on the outside ñ soft inside, like little orange balls. Recipe is made fresh. Enjoy
