Polynesian Bundles
3 cups frozen hash browns
1/4 cup butter
3/4 cup frozen peas
1 medium onion, finely chopped
8 ounces crushed pineapple, with liquid
1 teaspoon powdered ginger
1 teaspoon soy sauce
12 medium flour tortillas
1 small jar sweet-and-sour sauce for dipping
Preheat oven 350°F.
Using a skillet, brown hash browns in butter. Add peas, onion, pineapple, ginger and soy sauce. Sauté 5 minutes. Place 1/4 cup mixture onto a flour tortilla.
Fold in ends of tortilla and roll sides to form a bundle. Repeat. Spray a 9”-x 13” pan with nonstick cooking spray. Place each bundle seam-side down.
Bake 15 minutes then turn over. Bake 10 minutes more. Serve hot with sweet-and-sour sauce for dipping. 6 to 8 servings.
