Those Wonderful Eggs What do you do with one?

How do U use UR eggs. Please share recipes or ways -join in. 

Migas~ Sauté  4 thinly sliced corn tortillas and 1/2 cup each sliced onion - roasted poblano peppers in skillet with canola oil- 5 minutes. Add 5 beaten eggs - stir until just set. Top with grated cheddar- salsa ñ cilantro.

 

 Scalloped Eggs ~Make Hard-Cooked Eggs  Slice - layer in buttered baking dish with 2 sliced boiled potatoes. Season with salt- pepper ñ little garlic granular on potatoes. Whisk 6 tablespoons each milk with sour cream ñ 1 tablespoon flour. Pour over eggs- top with  Panko breadcrumbs or other breadcrumbs. 350°F.- 25 minutes

 

Breakfast Burritos~ Cook 1/2 cup diced chorizo and/or sausage- 1/2 diced onion ñ 1 tablespoon diced jalapeño in nonstick skillet over medium heat. Add 4 beaten eggs ñ 1/2 cup cotija cheese- scramble. Divide among flour tortillas- top with salsa and roll up.

 

French Scramble~ Melt 2 tablespoons butter in bowl set over a saucepan of simmering water. Add 4 beaten eggs ñ  stir until just set 8 to 10 minutes. Add 1 to 2 tablespoons crème fraîche.

 

Nest Egg with Manchego ~Cut a round out of a slice of bread; flatten ñ  press back in the hole. Toast bread in an ovenproof skillet with butter. Crack an egg into the hole-sprinkle with 1/2 cup grated manchego - bake at 375 ° F.  until set-2 minutes. Top with smoked paprika ñ chives or  parsley.

 Spinach Egg Meat ~ fresh of small can of spinach (using canned drain well –salt-pepper- add-sliced thin mushrooms-cooked bacon –ham or Canadian Bacon chopped cook in butter till cooked through –add eggs –scramble – top with melted grated cheese of choice.
