Sauce with Chipotle Balls

Meatballs
3 slices bacon roughly cut
1 garlic cloves peeled
2 large eggs
1/2 c. bread crumbs
1 tsp. salt
1 lb. gr. pork or mix with beef or use chicken ñ beef
1/4 c. mint leaves chop
¼ c. cilantro leaves chop
~ Chipotle Sauce
2 chipotle chilies in adobo sauce (use more or less really hot
1 to 2 T. Chipotle Adobo ñ Sauce (again watch that heat from this
1) 28 oz. Hunt’s Diced Petite Tomatoes drained ñ reserve
1/3 c. juice from diced tomatoes above
2 garlic cloves peeled minced
1 tsp. Mexican dried oregano
1 tsp. cumin powder
black pepper to taste

1 to 1/2 c. or chicken broth (use as much as needed
Garnish sour cream
Remove stems ñ seed from chipotle chiles - discard. Return chipotle chiles in adobo sauce –set aside
Preheat oven to 450 ° F.
~Meatballs ~ add bacon –ñ garlic in food processor or blender - process until chopped. Add 2 eggs- bread crumbs -salt ñ pepper - pulse until combined well. Add meat – mint ñ cilantro - pulse a bit more- until well combined but still a bit chunky. Do NOT make into a paste. Empty contents into processor into a large bowl.
~Chipotle Sauce ~ add all ingredients ñ blender- Process until very smooth puree. Taste adjust flavors ñ heat- if needed.
Wet hands - form 16 to 20 meat balls. Lay meat balls on large baking dish- bake about 15 minutes turning to brown evenly.
Spoon off - discard any fat from meatballs. Pour chipotle ñ tomato mixture evenly over meatballs. Bake 15 to 20 minutes.
Remove meatballs from sauce - set aside. Pour sauce into bowl ñ add just enough chicken broth achieve desired consistency. Taste ñ adjust taste with salt black pepper or other seasoning if needed.
Serve meatballs on platter ñ each person pouring their own amount of chipotle sauce over- spooning a dollop or 2 of sour cream on top if they like.
Serve with a simple green salad or with cooked brown rice.
