Bourbon Spiked Sweet Potato Pie

1)  9" unbaked pie crust
2 c. sweet potatoes cooked mashed  (strings removed
2 T. butter melted
1/2 tsp. vanilla
2/3 c. sugar
1/3 tsp. salt


3 eggs
1/2 tsp. gr. cinnamon
¼  to ½  tsp.  gr. nutmeg  UR taste
1/2 c. heavy cream
2 T. bourbon
1 unbaked pie shell

Garnish
2 c. whipped cream
1 c. hazelnuts -walnuts or  pecans toasted chopped UR choice
Maple syrup to drizzle

Preheat oven 450 °  F.

Prick pie shell with fork - bake 10 minutes before filling. Large bowl- mix
potatoes- butter- vanilla- sugar- salt- eggs- cinnamon- nutmeg- heavy cream  ñ bourbon. Mix well with an electric hand mixer until all ingredients are smooth. Remove any strings from  potatoes as you are beating.

Pour filling into precooked pie shell - bake 10 minutes. Reduce heat to 350°  F. - continue baking 35 minutes or until a fork inserted in the middle comes out clean.

Notes~ like to add some Accent- garlic granular ñ pepper to taste  sometimes

La Comedia’s Famous Sweet Potato Soufflé

4 cups mashed sweet potatoes

1 cup sugar

2 eggs

1/2 cup milk

1/2 tsp. salt

1/3 stick butter or margarine melted

1 tsp. vanilla

Mix well and pour into buttered pan

Topping~

1 cup brown sugar

1/2 cup flour

1/3 cup butter or margarine melted

1 cup pecans

Crumble topping evenly over potato mixture. Bake at 350° 35-45 minutes uncovered.

Appled Yams

4-5 fresh yams

Unsweetened apple juice

1 small can apple juice concentrate

Butter or margarine

Cinnamon- nutmeg ñ cloves to taste

Peel - wash yams. Cut in chunks - put in large pan.

Fill with prepared unsweetened apple juice to cover yams -

bring to a boil. Cook until tender.

Mash yams with butter-margarine- spices ñ apple juice concentrate until desired consistency.

Salt it U want to taste

Sweet Potato Baked Casserole

3 c. hot mashed sweet potato

1/4 c. butter melted

1/2 c. brown sugar

1/4 c. orange juice

1/4 c. pecans chopped

1/4 c. coconut grated

2 c. bananas mashed

Corn Flakes

Brown Sugar

Mix all the above ingredients EXCEPT bananas. Place 1/2

mixture in 8” x 8” baking dish. Cover with bananas ñ remaining mixture. Top with crushed corn flakes ñ brown sugar.

Dot with butter - bake 275° F. 25 minutes

Stuffed Sweet Potato

6 sweet potatoes medium orange fleshed

1/2 c. orange juice

3 T. butter

1 tsp. salt

8 ozs. can crushed drained pineapple

1/2 c. pecans chopped

Bake potatoes 375 F. 1 hour.

Cut a 1” lengthwise strip from top of each potato ñ scoop

pulp from shell.

Combine pulp- orange juice- butter ñ salt - gently stir in

pineapple.

Stuff shells with mixture ñ sprinkle with pecans.

Bake 375 ° F. 10 minutes.

Fried Sweet Potatoes

This is a recipe for pan fried sweet potatoes with butter

flavored Crisco

2 lbs. large sweet potatoes, sliced 1/8” thick

4 T. Butter Flavored Criscoâ„¢

Add little real butter

Seasonings

Heat Criscoâ„¢ in a large skillet.

When hot- add sliced sweet potatoes. Season with salt –pepper-garlic granular-onion powder- ñ little cayenne pepper all to UR taste (can sprinkle with little brown sugar if so desired.

Cover ñ lower heat.

After about 5 minutes- uncover ñ turn sweet potatoes with

a spatula.

Cover - continue to cook until tender- another 5 minutes.

Check frequently to make sure potatoes don’t burn.

Uncover - continue to cook for -few minutes- to glaze

potatoes ñ brown. Serve hot.

Note~ These are healthy ñ delicious –low in calories-but I like to sometimes mix regular potatoes slices with the sweet ñ fry or bake them. Make both like French fries (either bake or fry these also by patting dry after slicing ñ dipping them in seasoned beaten eggs or egg whites only ñ spreading on sprayed with Crisco Buttered spray to a baking sheet ñ bake those babies till light golden brown ñ turning. About 375° to 400 ° F. Oh so deliciously good.

Candied Yams with Maple Syrup Delicious

Enough yams to feed UR crowd boiled cooled peel

1½ sticks margarine

1 c. brown sugar packed

1 REAL Maple Syrup medium size bottle

Preheated oven 350° F.

Slice peeled yams in half - place sliced side down in foil lined pan 9” x 13” or larger if necessary. Sprinkle brown sugar over yams randomly put pats of margarine on top of yams -pour syrup all over. Depending on how many spuds have been made will depend on how much syrup needed to use. Judgment call on UR part.

Bake at least an hour or until a slight glaze forms over the yams Remove from oven - serve.

Santa Fe Sweet Potato Soup

1 T. pumpkin seed oil or other vegetable oil

1 yellow onion chopped

2 sweet potatoes peeled cut into chunks

4 garlic cloves whole

6 to 8 c. chicken stock or water

1 tsp. dried oregano

1 T. chili powder

1 cinnamon stick

6 whole cloves

10 allspice berries

Salt to taste

Garnish with~2 jalapeño chiles- stemmed- seeded n julienned n

1/4 c. toasted pepitas- chopped-

Serve on the side 1/2 c. crème fraîche or sour cream

Large sauté pan over medium heat - add oil. Add onion n sauté about 10 minutes- until lightly browned. Add sweet potatoes - garlic - continue cooking10 minutes- until they begin to brown.

Transfer contents of pan to slow cooker - add water. Cover -cook on low about 6 hours- until sweet potatoes are quite tender when pierced with a fork. Coarsely grind oregano- chili powder- cinnamon- cloves- allspice in a coffee mill or using mortar n pestle - add to soup. Continue cooking 1 hour. Using handheld blender-gently purée - soup until smooth. Season to taste with salt.

Ladle into bowls - serve hot- topped with few slices of jalapeño-a sprinkling of toasted pepitas- a dollop of crème fraîche or sour cream.
