Mashed Baked Squash Casserole Very Good

 10 to 12 large yellow summer squash (enough to fill a 1½  qt. casserole dish when precooked- drained ñ mashed.

4 ozs. cream cheese with chives or 1 T. finely
chopped dried or fresh  chives mixed with 4 oz. plain cream cheese softened
.
1 T. butter
1 T. romano cheese grated

1 tsp. garlic granular or UR taste

 ½  tsp. Accent
Salt  ñ pepper to UR taste
Sprinkle  with  paprika
1 egg yolk beaten

 

Preheat oven 350° F.


Small saucepan mix cream cheese- butter- romano cheese-Accent - salt-garlic - paprika.  Stir over low heat until melted.
Stir in beaten egg yolk.
Add mixture to precooked- drained ñ mashed squash.
Pour into a 1 ½  qt, casserole dish.
Top with buttered bread crumbs (Dry or fresh – UR choice.
Sprinkle with more good quality  grated cheese

Bake 15 minutes or until bubbly ñ beginning to brown.
