Breakfast Anytime or the Holiday’s

Blueberry Cream Puff Ring

1 c. water
1/2 c. butter
1 c. flour
8 ozs. sour cream
1/2 tsp. almond extract
4 large eggs
1 pkg. French Vanilla Instant Pudding Mix
1) 20 oz. can blueberry pie filling


Heat water ñ  butter to boiling in 1 qt. saucepan- stir in flour. Stir until
mixture forms a ball- about 1 minute. Remove from heat. Add eggs- beat until smooth. Drop dough by tablespoonfuls onto greased baking sheet-to form an 8”ring. Smooth with spatula. Bake until puffed ñ  golden, 50-60 minutes. Cool the ring.

Cut off top with sharp knife- pull out any soft dough. Beat milk- sour cream- pudding (dry ñ extract in small mixer bowl on low speed until blended. Fill cream puff ring with pudding mixture- spoon 1/2 cup blueberry pie filling onto pudding. Replace top of cream puff ring ñ  spoon remaining pie filling on
top. Refrigerate until serving time.

Potato Ball Fluffs

1 egg

1/2 c. flour can use instant potatoes of choice *

1 tsp. baking powder

1/4 tsp baking soda

1½ tsp. salt

1/2 tsp. pepper

1/2 tsp. garlic granular

2 T. butter melted

1/2 c. milk

1/2 c. heaping sour cream or use sour cream ñ ½ c. mayo

chives fresh chopped ñ extra for serving

Mix all together well

Adjust with sour cream or both cream ñ mayo to consistency of a little thicker than pancake batter. Pour into muffin pans

Bake 375° F 25 to 30 minutes or golden brown

Note~ add crumbled sausage –bacon – use cheesy instant potatoes

Can fry these too only make the consistency thicker. Coat them with Panko –crumbled crackers-crushed tortilla chips or potato chips before frying or top with some listed when baking. Can use sweet potatoes too.

Or use this one

Potato Balls

2½ c. Bisquick mix

2 c. cheddar cheese or Mexican Blend shredded

1 lb. sausage or bacon or ham

4 heaping T. sour cream

1 c. fresh hash browns (use frozen thaw and remove excess water

Mix all ingredients together and roll in balls ñ bake on parchment paper 375° F. 30 minutes or until golden brown. Very moist .

Good thing is can add whatever one likes to these. Garlic-parsley –chives-basil -Ranch Dressing (use dried pkg. just a little for extra flavoring- Get creative ñ make food not boring.

Bacon ñ Cheddar Cheese Frastratta

Serves 1 (READ for making more

2 precooked ñ chopped slices bacon

2/3 c. shredded Cheddar cheese

2 eggs

dash hot sauce

dash Worcestershire sauce

1 tsp. half and half

Fritratta~ Spray ramekins with Pam and put 2 tablespoons potatoes in bottom. Hand pat into an even bottom crust (see below. Bake 20 minutes at 350° F. (If using frozen crust, let thaw overnight and preheat 5 minutes at 350° F.

In mixing bowl, mix two eggs, and ingredients for your selected fraitratta using only half the cheese. Pour into ramekin and top with remaining cheese. Bake for 20-25 minutes at 350° F. or until set in center. Garnish with assortment of flowering herbs on a white plate.

Potato Crust -

4 potatoes

2 eggs

dash salt and pepper

1/4 c. flour

Potato Crust

This step produces enough potato crust 24 ramekins. Make extra and enjoy them often.

Shred 4 potatoes and rinse until water is clear. Drain until dry. Add salt and pepper two eggs mixing well. Mix in 1/4 cup of flour. Spray ramekins with Pam and put 2 tablespoons potatoes in bottom. Hand pat into an even bottom crust.

Bake 20 minutes at 350° F. You can bake in a large baking dish and cut for future use. Cool those that will be frozen for future use completely.

Notes~ this is much simpler to make a batch of crusts and freeze them. You can also substitute Monterey Jack and baby shrimp for bacon and cheddar or a tablespoon each of cooked spinach and mushrooms with Swiss cheese for a Vegetarian Fritratta.

Any waffles or pancakes for any breakfast is great with fresh fruit with whip cream on top. Syrup on the side.

Add smoked ham or bacon or sausage as a side dish.

Place a bowl of different fruit with just toast with jar of peanut butter on the table with different jams for those in a hurry. Make toast or french toast or have muffins or biscuits with any juices -coffee-tea or milk for UR guest. Make the holidays enjoyable -easy on yourself.

Eggnog Muffins

Serves12

3 c. flour

1/2 c. sugar

3 tsp. baking powder

1/2 tsp. salt

1/2 tsp. gr. nutmeg

1 egg

1¾ c. eggnog

1/2 c. vegetable Oil

1/2 c. golden raisins

1/2 pecans or walnuts chopped

Preheat 350° F.

Large bowl combine 1st five ingredients. Separate bowl- combine egg- eggnog ñ oil. Stir into dry mixture until moistened. Fold in raisins ñ nuts. Fill greased or paper lined muffin tins-filling 3/4 full.

Bake 10 minutes

Sausage Casserole with Eggs ñ Sour Cream

Serves 8 to 10

1 lb. sharp cheese grated or any U might like that melts

2/3 c. sour cream

2 lbs. sausage hot or mild

10 eggs slightly beaten

Salt ñ pepper

Preheat oven 350° F.

Fry ñ brown sausage in skillet. Assemble in 9” x 13” baking dish as follows in layers in order~ cheese- sour cream- sausage (all sausage is used-ñ end up with layer of cheese ñ layer of sour cream.

Beat eggs ñ seasonings together- pour over layers. Bake about 45 minutes ­to a1 hour (depending on UR oven.

Note~ make this night before by placing all ingredients-EXCEPT eggs- together ñ store in refrigerator overnight. In morning-beat eggs ñ pour over the casserole before putting it into oven.

Oven Pancake

Serves 2

2 T. butter

2 eggs

1/2 c. flour

1/2 c. milk

Preheat oven 400° F.

Using a 9 “ glass pie plate- melt butter in oven- brush butter over bottom ñ side of pie plate. Beat eggs slightly with wire whisk or hand beater. Beat in flour ñ milk. Pour into hot pie plate. Bake 25 to 30 minutes until puffy ñ deep golden brown. Sprinkle lightly with powdered sugar. Serve immediately -topped with fresh berries- stewed fruit- syrup- whipped cream or any combination that tastes great.

Note~ lift the pancakes out of pie plate onto a round platter for serving- makes it easier to slice into wedges for serving.

Sunrise Breakfast Casserole

Can Make evening ahead for serving a family breakfast

12 oz. or 1 pkg. breakfast Sausage links

4 large. eggs.

1½ cups milk

3/4 tsp. ground mustard

1/2 tsp. salt

black pepper to your liking

1 pkg. or (20 oz. shredded Hash Browns

1 c. or (4 oz. shredded cheddar cheese

1/4 c. red pepper sweet-diced

1/3 c. thinly sliced green onions-or as must onion as you like

1 c. UR favorite Salsa or use Picante Sauce

Place sausage on a 15 x 10 x 1 inch baking pan. Bake 375° F. 15 to 20 minutes or until sausage is no longer pink-turning once-drain-slice into ¼ inch pieces.

Large bow-combine eggs n milk- mustard- salt- pepper

Add hash browns-sausage-cheese-sweet red pepper ñ green onions-mix well.

Pour into a greased 13x9x2 inch baking dish

Cover-¦refrigerate over night

Remove from refrigerator 30 minutes before baking.

Bake uncovered- 350 F. 65 -70 minutes or until set ñ golden brown.

Let stand 10 minutes before serving-Serve with favorite Salsa or Picante sauce if desired.

Nice thing about this is -it can vary what U put in this recipe

Serves 6 to 7 -if U have more people- just double this recipe.

Sour Cream Pound Cake for in the Morning with Coffee

3 c sifted all purpose flour

1/4 tsp. baking soda

1/4 tsp.. salt

3 c. sugar

1 c butter

6 eggs

1 c. sour cream

1 tsp. vanilla

Powdered Sugar

Sift together flour- soda ñ salt. Large bowl. Cream sugar

and butter until light ñ fluffy. Add eggs 1 at a time-beating

after each addition. Stir in sour cream ñ vanilla.

Gradually mix dry ingredients into egg mixture until completely

blended. Turn into greased and floured 10 in tube pan. Bake 350 ° F. for 1¼ hours . Remove from pan ñ cool on rack. Sprinkle with powdered sugar.

Stuffed with Creamy Eggs ñ Cheese

8 servings

4 Bell peppers red- gold- orange or green peppers

2 Serrano peppers seeded diced

White Sauce- 3 tablespoons butter- 3 tablespoons flour- 1 1/2 cups milk- 3/4 teaspoon salt n pepper to taste

Egg portion- 12 eggs- 2 tablespoons butter- 2/3 cup cheese

Topping- 1/2 cup crushed onion-flavored bagel chips

Peppers- Cut peppers in half - remove all seeds n membrane of peppers. Parboil peppers in lightly salted water 6 minutes or until tender. Remove from heat - arrange on large buttered baking dish. Set aside.

White Sauce- Melt butter in saucepan - low heat. Add flour- stirring until smooth. Cook 1 minute- stirring constantly. Gradually add milk. Cook over medium heat- stirring constantly- until thickened n bubbly. Stir in salt n pepper - set aside.

Eggs- Melt butter in large skillet. Cook eggs until almost set. Remove from heat - stir in white sauce. Fill peppers with creamy egg mixture. Sprinkle grated cheese all over stuffed peppers-top each by sprinkling with lots of crushed bagel chips. Bake uncovered 350°F 25 minutes or until thoroughly heated.

Note- Can be prepared up to 24 hours ahead. Cover -chill unbaked. Remove from refrigerator - let stand 30 minutes before baking as directed. You might also wish to bake eggs in a casserole dish without peppers. Great either way

Vanilla Drinks

Powder Mix Ahead~

1) 3 oz. vanilla sugar free pudding

3/4 c. vanilla protein powder (0 carbs

3 c. milk (non fat dry

1/2 c. Splenda Granular

Place all above ingredients in container with lid -shake vigorously till mixed

1/2 tsp. vanilla

1 c. ice

For "EACH" breakfast drink

Mix 1/2 tsp. vanilla ñ 1 cup ice in blender - Blend thick ñ smooth

4½ tsp. vanilla with 9 cups ice- makes 9 breakfasts.

Notes~make powder ahead n place in jar tight container.

1 lb. sausage with sage pkg. (Jimmy Dean

2 c. Bisquick

1 lb. Cheddar cheese

Red pepper ñ salt

Mix all together. Form in balls a little larger than marbles. Bake 400° F. 10 minutes. May be frozen and reheated. Freeze

Simple Fantastic Avocado Toast for breakfast

Slice ñ toast a thick- piece of bread- drizzle little olive oil over toast - smash ½ an avocado on top. Sprinkle with salt ñ pepper.**

Note~** Get creative ñ top with some salsa or a fried egg ñ crumbled fried bacon with some all ready roasted chilies

Southwestern Breakfast

2 servings

Cooking Spray

3 T. cilantro chopped

2 green onions diced ñ few stems

1 to 2 serrano peppers seeded diced fine

Couple slices of red pepper strips if U have

1 egg

4 egg yolks

1/4 c. milk

Salt to taste

1/4 c. reduced cheese

1/4 c. salsa

In skillet heat ñ spray with cooking oil –adding onions-peppers to sauté-till tender. Beat 1 whole egg with the 4 egg whites –salt with milk -beat well together –adding to skillet. Cook either as an olmette type or scramble till almost cooked through-adding cheese to top to melt ñ finishing cooking eggs.

Serve with salsa on top.

Note~ Can use strips of onions instead of dicing –add other veggies like mushrooms ñ little bacon or ham to this also. Black olives diced or use jalapeño’s- or add few tomato chunks at the beginning of cooking.

Sometimes added julienne strips of jicama into this making them just a little crunchy.

Serve with warn tortilla’s.

Poached Eggs in Tomato Chile Huevos En Rabo De

These are really good

8 servings

1/3 c. oil

2 onions medium thinly sliced

2 lb. canned whole tomatoes

7 oz. whole green chiles cut into strips

2 c. chicken broth or water

1 tsp. salt

1/2 tsp. sugar optional

1/4 tsp. cumin optional

1/8 tsp. black pepper

8 eggs

8 slices Monterey Jack Cheese

Large deep skillet heat oil. Add onions -cook until tender

but NOT browned. Place tomatoes in blender -blend until chopped

but NOT puréed . Add tomatoes – cut stripped chiles to

onion - cook 5 minutes. Add broth- salt- sugar- cumin- pepper -

cook 5 minutes longer. Break each egg- one at a time- onto small

plate ñ slide into hot broth mixture carefully as not to break

yolk. Arrange 1 cheese slice on top of each egg. Cover - cook

gently 5 to 8 minutes0 or until eggs are set - cheese is melted

~Notes Add some red bell peppers seeded ñ in strips ñ green if you like- jalapeños seeded ñ strip for those who like it hotter. We like to throw in some sliced black olives ñ little cilantros for those who like cilantros. Sometimes we have this for dinner with sausage - bacon on the side or ham slices.

Morning Casserole

2 pounds hot bulk sausage (mild can be used

8 slices bread, crusts removed

3/4 pound grated sharp cheddar cheese

8 large eggs, beaten

3 cups milk

1½ teaspoons salt

1½ teaspoons dry mustard

Large skillet, brown sausage, crumble and drain. Butter a

9x13 inch casserole dish. Place bread (torn into bite-sized

pieces) in bottom of dish. Place sausage on top of bread.

Sprinkle cheese over top. In a large bowl, mix beaten eggs,

milk, salt and dry mustard. Blend well.

Pour over other ingredients.

Cover and refrigerate overnight. The next morning, bake at 350° F.

45 minutes uncovered. Slice into squares

Poached eggs over Toast with Wine Cognac Sauce

3/4 bottle red wine

2 onions chopped

2 carrots

4 garlic cloves crushed

1 leek white portion

Aromatic herbs

1 bay leaf

1/4 tsp. thyme

1 tsp. sugar or use splenda equal to 1 tsp.

3 T. cognac

1 T. butter

1 T. flour

salt ñ pepper to taste

4 poached eggs

4 slices toast

Place wine – onion-garlic – carrots- herbs- leek- bay leaf- sugar- thyme -salt ñ pepper in a pot- simmer 15 minutes.

Strain liquid –if more than 6 cups are left- reduce liquid further by simmering until there is just 6 cups. Heat cognac-sprinkle cognac over hot wine mixture. Work butter into flour- liking making a roux ñ add, little by little to the liquid mixture- stirring as it thickens.

Boil sauce 3 minutes or so –season with salt ñ pepper *

Have poached egg ñ toast ready at this point ñ place poached on top toast or make a toad in the hole (cutting out a small hole in center of bread ñ letting egg rest in there using cut out toast as buttered toast.

Drizzle or pour sauce over the egg ñ toast.

Overnight Caramel Rolls

Filling

1/3 cup granulated sugar

1 tsp. ground cinnamon

1 cooking apple medium, peeled and chopped or 1 ½ cups

Rolls

3 to 3½ cups all purpose flour or GM Better for Bread™ bread flour

1/4 cup granulated sugar

1 tsp salt

1 pkg. regular or quick active dry yeast

1/2 cup applesauce

1/4 cup butter or margarine

1/2 cup milk

1 egg

1/2 cup packed brown sugar

1/2 cup applesauce

3 Tbsp. butter or margarine, melted

1/2 cup chopped walnuts

2 Tbsp butter or margarine, softened

Medium bowl, mix filling ingredients. Set aside.

Large bowl, mix 1 cup flour, 1/4 cup sugar, salt and yeast.

In 2-qt saucepan, cook 1/2 cup applesauce, 1/4 cup butter and milk over medium heat, stirring constantly, until very warm120 to 130°F. Add warm mixture and egg to flour mixture; beat with electric mixer on low speed until moistened. Beat on medium speed 2 min. Stir in enough remaining flour to make dough easy to handle.

Place dough on lightly floured surface; gently roll in flour to coat. Knead about 5 min or until smooth and springy. Place in large greased bowl, turning dough to grease all sides. Cover and let rise in warm place 45-60 min or until double. (Dough is ready if indentation remains when touched.

Grease bottom and sides of 13”x9" pan with shortening. Mix brown sugar, 1/2 cup applesauce, 3 Tbsp melted butter and the walnuts in pan; spread evenly.

Gently push fist into dough to deflate. Roll dough into 15x12" rectangle. Spread 2 Tbsp softened butter over dough; sprinkle with filling. Tightly roll up rectangle, beginning at 15" side; pinch edge of dough into roll to seal. Stretch and shape until even. Cut roll into twelve 1" slices. Place slightly apart in pan. Cover and refrigerate at least 8 hr but no longer than 48 hr.

Before baking, let rolls stand at room temperature 30 min (rolls will not rise during this time). Heat oven 400ºF. Bake 20-25 min or until golden brown. Cool in pan 1 min. Place heatproof serving platter or tray upside down onto pan; turn platter and pan over. Let stand about 1 min so caramel can drizzle over rolls; remove pan. Serve warm.

Note~ if these come out too dark you can set oven lower ñ bake a little longer.

Juevos Rancheros with Red Salsa

Cover bottom of frying pan with salsa.

Spread a corn tortilla with refried beans - place on top of salsa- making a little well in center. Sprinkle a couple of Tbs. of grated Jack cheese on top. Break an egg in the well of beans. Gently pour some more salsa on top to cover egg and beans. Sprinkle top with more cheese. Cover pan -simmer slowly for a few minutes until your egg is done the way you like it. Salt -pepper to taste. Slip onto a plate. Top with some chopped green onion tops - little fresh cilantro.

Notes- Doing roasted chilies are good also with some onion

Make Ahead Breakfast Casserole

2 lbs mild bulk pork sausage

Mexican Omelet

1 lb. Mexican Chorizo

2 hand fulls of tortilla chips crushed

1 onion medium diced

1/2 medium bell pepper diced n 1 jalapeño seeded dice

1 c. cheese of choice

8 eggs

Cook chorizo in a pan and stir in diced peppers and onions.

Cook everything until soft and then add crushed tortilla chips.

Once everything is soft- add eggs and keep flipping over until

well cooked

Migas Breakfast or Dinner

8 large eggs

2 tablespoons water

1/4 teaspoon salt to taste

fresh ground pepper

2 tablespoons butter or margarine

6 green onions, sliced (include some stems

1 medium tomato, seeded, chopped and drained

4 ounce can chopped green chilies drained or serrano’s

1 cup grated Monterey jack cheese

1 cup corn tortilla chips broken into large bite size pieces

hot sauce, to taste

Mixing bowl, add eggs, water, salt, and pepper to taste; whisk to combine.

Melt the butter in a large non-stick skillet over medium heat; tilt pan to swirl the melted butter around.

When the butter foams, add green onions; stir-sauté 1 minute.

Add in egg mixture; let set 20 seconds.

Cook and stir for 3-4 minutes or until almost set.

Add in tomato, green chiles, and cheese; continue stirring/cooking until mixed well and cheese melts.

Add in chips; stir to combine.

Sprinkle hot sauce over the top if desired; serve.

Cinnamon Roll French Toast

1 can (12.4 ozs. Pillsbury refrigerated cinnamon rolls with icing

2 eggs

2/3 c. milk

4 T. maple syrup divided

1 tsp. vanilla extract

Warm water as needed

Bake rolls as directed on package. Cool completely.

Spray 10 “skillet of flat skillet with Pam- heat to 375°F on medium heat.

Slice each roll in half crosswise.

Using shallow dish- whisk together until blended well the eggs- milk- 2 T. maple syrup with vanilla extract.

Dip roll slice into egg mixture- coat completely. Place in skillet.

Fry till golden brown –both sides-about 2 minutes.

Small bowl- whisk reserved icing- remaining 2 T. maple syrup with warm water- as needed- to pourable consistency. Spoon over French toast.

Note ~ add some sliced strawberries or fruit with whip cream

Cinnamon Toast Coffee Cake

2 c. flour

1 ½ c. sugar or use Splenda

2 tsps. baking powder

1 tsp. salt

1 c. milk

6 T. melted margarine

1 tsp. vanilla extract

3 tsp. cinnamon

Sift flour- 1 cup sugar-baking powder with salt into bowl.

Blend in milk- 2 tablespoon margarine ñ vanilla- mix well.

Turn into greased oblong pan.

Bake in preheated 325ºF. oven 15 to 20 minutes or until golden brown.

Drizzle remaining 4 tablespoon melted margarine over top. Mix remaining 1/2 cup sugar with cinnamon- sprinkle over cake. Bake for 10 minutes longer.

12 servings.

Note~ last sprinkle of sugar can be powdered sugar mixed with

Little brown sugar.

Corned Beef Hash

1½ bags of frozen shredded potatoes

1 can of Corned Beef

1 brown skin onion

1/2 cup butter

10 slices bacon

1 medium firm tomato, chopped

2 cloves of crushed garlic (optional

5 green onion chopped

Add some jalapeno seeded -diced

Sauté onions, bacon and garlic until onions are soft, but not mushy add in corned beef- sauté until soft and mixed with onion and bacon mixture well add tomatoes with jalapeno diced.

Toss in frozen potatoes and mix in but do not mush it up-kind of blend it is- not to make it into mashed potatoes.

Add butter so mixture does not stick to pot or burn- butter keeps things moist- ice in the potatoes will help it stay moist too -at the end before serving, add green onions to mixture.

Hash should be firm-not hard-not mushy.

This is a filling addition to breakfast-very hearty.

Egg Pie

4 egg yolks ñ 1 whole egg

1 c. sugar

1 c. milk

3/4 stick of butter

1 T. flour plus just a tad more

Salt ñ pepper to normal taste

1/2 tsp. vanilla

Beat eggs on high speed- add half of milk. Add sugar mixed with flour with seasonings ñ vanilla Have butter melted ñ add last. Pour into an unbaked pie shell. Bake 450° F. 5 minutes. Turn oven to 350° F. for twenty min. Then bakde 300° F. 10 minutes ñ bake until pie doesn’t shake.

Note~Sometimes I add diced seeded jalapeño’s or serrano’s to this.

Hash brown Casserole

1 pkg frozen hash browns

1 can cream of mushroom soup

1 can cream of chicken soup

1 8 oz. container of sour cream

1 onion sliced in half circles

Mix together and put in 350 ° F. oven 45 minutes

Breakfast Roasted Green Chile Bacon Wrap for one person

2 slices bacon micro-wave 2½ minutes or crisp on paper towels- covered

butter or I Can’t Believe It’s Butter

1 roasted green chile peel remove seeds and stems

1 egg fried

1/2 of 1 burrito size tortilla

little salsa if U like

Cook bacon-set aside

In skillet heat butter -place 1 roasted pepper split open -lay flat heat through both sides-remove from skillet to paper towel with cooked bacon to drain-add 1 egg to skillet breaking yolk-season with salt n pepper- fry the one side -turn to other side n place shredded cheese on top.

Place 1/2 of a burrito size tortilla in micro for 15 to 20 seconds to heat while cheese melts on egg n egg cooking through on other side. By time tortilla cooks -egg is done.

Place bacon in middle thick part of burrito than lay roasted chile- placing little salsa if desired than lay egg with cheese on top ñ roll from small point to small point-tight as can without tearing tortilla-(yes both ends will be open.

Breakfast Sausage Casserole

1 pkg. (16 oz. fresh breakfast sausage cooked drained crumbled

4 c. cubed day-old bread

2 c. or 8 oz. sharp cheddar cheese shredded

2) 12 fl. oz. each Nestle Carnation Evaporated Milk

10 large eggs lightly beaten

1 tsp. dry mustard

1/4 tsp. onion powder

Ground black pepper to taste

1 Grease 13” x 9” baking dish.

Place bread in prepared baking dish. Sprinkle with cheese.

Combine evaporated milk- eggs- dry mustard- onion powder ñ pepper in medium bowl.

Pour evenly over bread ñ cheese. Sprinkle with sausage.

Cover- refrigerate overnight.

Preheat oven 325° F.

Bake 55 to 60 minutes or until cheese is golden brown. Cover with foil if top browns too quickly

Cheese Doughnuts

9 ounces cottage cheese

1 cup flour

1/2 cup sugar

2 eggs

1 teaspoon baking soda

Mix all ingredients- shape mixture into balls the size of a nut

- deep-fry in oil in small batches. Remove from pan and

sprinkle with powdered sugar.

Cheesecake Coffee Cake

2 tubes refrigerated crescent rolls

2) 8 oz. pkgs. cream cheese

1 c. granulated white sugar

1½ tsp. vanilla

1 egg yolk

~Glaze

1/2 c. granulated white sugar

1 tsp ground cinnamon

1/2 cup or more of chopped pecans, optional

Heat oven 350° F. Lightly spray a 9” x1 3” x 2” baking dish.

Spread 1 package crescent rolls over bottom of

baking dish.

Mix cream cheese- sugar- vanilla-egg yolk

together. Spread cream cheese mixture over top.

Repeat layers. Top with nuts of choice.

Glaze

Mix 1/2 sugar ñ cinnamon together -sprinkle

over top. Bake 30 to 40 minutes. Let cool - refrigerate.

Cut into squares to serve.

Cheesy Baked Hash Browns

1 T. oil

1) 20 oz. hash browns each refrigerated shredded

1 c. cheddar cheese shredded

1/4 c. flour

1 onion small grated

Sprinkle garlic granular all over hash browns

salt ñ pepper as usual black pepper

1 egg beaten white only

Heat oven 400° F.

Brush oil onto bottom ñ up sides of 13” x 9” baking dish.

Combine all remaining ingredients EXCEPT egg white only. Add egg white mix lightly. Press onto bottom of baking dish.

Bake 55 minutes to 1 hour or until golden brown.

Let set 5 minutes before cutting to serve.

Breakfast of All Time

Fry up some cup up bacon (if has too much fat in the skillet after rendering- discard it -add some cut up chicken pieces or shredded or roasted deli shred.

Add handful shredded cabbage with fresh chopped roasted green chiles – cook - stir till tender adding 2 eggs with little salt ñ scramble all together .

Eat plain with toast or on warmed tortillas or place inside tortilla.

Serve with fresh salsa

Breakfast Cinnamon Sticks in Pastry Sheets

Makes 15

1 pastry sheet from 17.3 ox. box of puff pastry sheets thawed 35-40 minutes -room temperature

1/3 c. butter or I Can’t Believe It’s Butter melted

3/4 c. confectioners’ sugar

1 1/2 tsps. gr. cinnamon

1 c. walnuts or pecans

Preheat oven 400 F.

On lightly floured surface with rolling pin- roll pastry sheet into 12 x 10 in. sheet. Brush with butter or margarine.

Sift sugar with cinnamon evenly across dough. Sprinkle with the nuts. Cut the 10 in. side into apprx. 2 in. wide strips. Roll up each strip into 12 in long thin pencil sticks- than cut each of these into 3 pieces.

Bake on lightly greased cookie sheet 10 to 15 minutes or until golden. Serve warm.

~Cinnamon Sticks

1 c. flour

3 T. powdered sugar

1 T. cinnamon

1/2 c. walnuts chop fine (optional

1/2 c. butter

Roll sticks in~

1 c. powdered sugar

2 T. cinnamon

Combine 1st 4 ingredients in medium bowl. Cut in butter, blend until ball forms.

Roll out dough 1/4 to 1/2 inch thick. Cut into long strips about 1 /2 inches in length n between 1/4 to 1/2 inch wide to make sticks. Rolllength wise or leave as strips.

Place on baking sheet about 1 inch apart.

Bake 350° F. 8-10 minutes until golden brown. Let cool -5 minutes on baking sheet.

Combine powdered sugar with cinnamon. Roll Sticks in powdered sugar with cinnamon.

Very good with milk.

Asparagus Cheese Strata

1½ lbs fresh asparagus

3 tablespoons butter

1 loaf sliced bread (1 pound

3/4 cup shredded sharp cheddar cheese

2 cups cubed Canadian bacon or prosciutto ham

6 eggs

3 cups milk

3 teaspoons chopped onion

1/2 teaspoon salt

1/2 teaspoon garlic

1/4 teaspoon dry mustard

Using saucepan, cover asparagus (cut into 2-inch pieces with water; cover and cook until just tender or grill them. Drain - set aside. Lightly brush butter over one side of bread slices (crusts removed). Place half of bread, buttered side up, in greased 9” x13” glass baking dish. Sprinkle with 1/2 cup cheese. Layer with asparagus ñ ham. Cover with remaining bread, buttered side up. In a bowl, lightly beat eggs. Add milk, onion, salt ñ mustard to eggs. Pour over bread. Cover - refrigerate overnight.

Bake 325° F 50 minutes, uncovered. Sprinkle with remaining cheese and return to oven 10 minutes longer.

Baked Eggs Pate Bacon ñ Cream Wine Sauce

3 ozs. pate de foie gras with truffles

4 eggs

4 T. sour cream or crème fraise

2 T. white port wine

Salt ñ pepper as usual

Bacon fried- drained n crumbled

Fry or micro bacon the way U like remove to drain on towels

Make pate line bottom of ramekin dishes with pate

break egg into each ramekin

Pierce yolk of each egg in 3 or 4 places with toothpick so it doesn’t burst during cooking

Mix wine n crème fraiche with port wine whisk -adding salt n pepper

Pour mixture in each ramekin dish over egg

Place ramekins in a circle in micro- wave oven leaving center of of micro empty

Serve with crumbled bacon.

Microwave on # 5 or 1/2 power 5 minutes

Note~ sub bacon for chopped ham fried in butter

Buquelos de viento

1 T. sugar

4 eggs

1 c. milk

1 T. butter

1/2 tsp. salt

1 3/4 c. flour

1/2 liter (about 1/2 quart oil for frying

1 c. sugar to cover buquelos (can also mix sugar ñ cinnamon

Mix sugar ñ eggs with a mixer. Add salt- butter -milk-continue mixing.

Mix flour little by little until it thickens a bit. The consistency of batter is similar to that of pancakes. Put oil to heat in a big pan. Put the mold in oil to have it heat a bit. Take mold- put it into batter- let it drip - place into hot oil a couple seconds- buquelo should come loose from the mold by itself.

Once buquelo is a slight golden color take it out - put on mold covered with paper to absorb excess oil. Pass buquelo over the sugar to coat - it is ready to eat. Repeat from the heating of the mold for rest of batter.

Breakfast Burritos with Black Bean Dip

8 eggs

1 red bell pepper diced

1/2 small Spanish or yellow onion diced

1 to 2 jalapeño’s or serrano’s chile peppers seeded diced taste

3 roma or plum tomatoes diced

8 mushrooms sliced

2 green onions chopped fine

3/4 c. cheddar cheese shredded

2½ T. sour cream

hot or mild salsa

black bean dip

1½ T. butter

6 medium size flour tortillas

Large skillet -melt butter over medium heat -sauté red bell pepper-onion ñ mushrooms. Sauté till just barely soft. Pour in beaten eggs - sour cream –hot sauce ñ tomatoes-scramble slowly. When eggs begin to set or become firm- fold in cheese ñ remove from heat.

Warm tortillas ñ spread a layer black bean dip with a little sour cream. Place eggs on tortilla ñ roll up burrito style in a flour tortilla with a side salsa ñ more black bean dip or add guacamole. 6 servings

Breakfast Casserole SW Style

1 can Crescent rolls

1 lb. sausage cooked drained or use diced ham

fresh mushrooms sliced very thin

jalapeño ‘s or Serrano’s seeded diced many as U like

3/4 lb. hot pepper cheese shred

6 eggs beaten

1¼ c. or more fresh homemade salsa

Using a 13”x 9” Pyrex dish- line the bottom with rolls sealing all together.

Cover with sausage-mushrooms –jalapeno’s or Serrano chopped -half the cheese. Mix eggs with about 1 cup salsa - pour over casserole. Sprinkle remaining cheese on top.

Bake 350° F. about 45 minutes or until rolls cooked ñ eggs cooked –depending on UR oven

Note~ Get out the salsa ñ coffee or hot chocolate

Add anything else U might like to this –get creative- some like adding a few rinsed black beans or olives sliced.

Make it more eastern or Midwest ñ add pepperoni with cheese like calazones.

Breakfast Brunch Crockpot

Servings 10-12

1 lb. country sausage UR choice

2 lb. pkg. hash browns frozen

Salt ñ pepper to Ur liking or *

5 to 6 roasted gr. chiles seeded ñ chopped fresh

1) 10½ ozs. can Cream of Mushroom soup (Campbell’s

1 c. sour cream

1)8 oz. container cream cheese (whipped Philly

12 eggs

1½ - 2 c. cheese favorite

Salsa on the side when being served with cornbread or tortillas.

Brown ñ crumble sausage in skillet. Whisk eggs in a separate bowl.

Place everything in dish ñ stir until hash browns are thoroughly coated.

Spray crock pot with Pam- place mixture into crock pot.

Cook on LOW 4 - 6 hours.

Note~ * Place salt ñ pepper on table at time of serving This is so easy ñ can add black olives – onions or whatever U like.

Add chopped tomatoes about 1 hour before finished cooking if U want.

Great anytime when in a hurry or feeding a lot for the holidays.

Apple Crumble

8 medium apples, peeled and cored

1 c Water

1 Box Cake Mix (yellow, white or spice

1 stick butter, melted

1 T. cinnamon

1 c. brown Sugar

Preheat oven 350 F. Lightly spray bottom of 9” x 13” pan.

Slice apples into bottom of pan. Cover with 1cup water. Set aside.

Medium bowl mix together with a fork: Cake mix- butter

cinnamon n brown sugar until crumbled. Sprinkle crumb topping

over apples. Bake uncovered 50 - 55 min

until golden brown. (Place foil or a cookie sheet under

the pan - it tends to bubble over.

Breakfast Bisquick Casserole

2 c. ham chopped (Canadian or smoked - bacon or sausage or mix

onion cut in ½ circles as much as U like

serrano or jalapeño peppers seeded diced fine *

1 c. cheddar cheese shredded or use Mexican Blend- Asiago*

5 eggs

1 c. Bisquick mix

2 c. milk

Place meat - cheese in bottom of greased pan. Mix remaining ingredients

pour on top of meat and cheese. Bake 400° F. 45-50 minutes.

Notes~ *jalapeno-green chilies or roasted –red fresno-any bell peppers as many as U like

* smoked cheese or pepper cheese- Swiss –crumbled Queso or Feta

Add mushrooms or black olives sliced

Can Make evening ahead for serving a family breakfast

12 oz. or 1 pkg. breakfast Sausage links

4 large. eggs.

1½ cups milk

3/4 tsp. ground mustard

1/2 tsp. salt

black pepper to your liking

1 pkg. or (20 oz. shredded Hash Browns

1 c. or (4 oz. shredded cheddar cheese

1/4 c. red pepper sweet-diced

1/3 c. thinly sliced green onions-or as must onion as you like

1 c. UR favorite Salsa or use Picante Sauce

Place sausage on a 15 x 10 x 1 inch baking pan. Bake 375° F. 15 to 20 minutes or until sausage is no longer pink-turning once-drain-slice into ¼ inch pieces.

Large bow-combine eggs n milk- mustard- salt- pepper

Add hash browns-sausage-cheese-sweet red pepper ñ green onions-mix well.

Pour into a greased 13x9x2 inch baking dish

Cover-¦refrigerate over night

Remove from refrigerator 30 minutes before baking.

Bake uncovered- 350 F. 65 -70 minutes or until set ñ golden brown.

Let stand 10 minutes before serving-Serve with favorite Salsa or Picante sauce if desired.

Nice thing about this is -it can vary what U put in this recipe

Serves 6 to 7 -if U have more people- just double this recipe.

Serves 12 to 15

2 pkgs. pork sausage (favorite brand loose broken up

9 eggs

3 c. milk

1tsp. ground mustard optional

1 ½ tsp. mayo

1 tsp. salt

½ tsp. pepper

2 ) 20 oz. pkgs. Simply Potatoes Shredded Hash Browns

2 c. cheddar cheese shredded or favorite melting cheese

½ c. red or green bell pepper diced

½ c. roasted green chilies Optional

½ c. green onions thinly sliced ñ few stems

salsa ñ tortillas on the side

In a skillet sauté pork sausage until brown. Drain - set aside.

Large bowl mix eggs- milk- mustard (optional- mayo salt ñ pepper *well. Add hash browns- cooked sausage- cheese- all peppers- green onions- mix well.

Pour into a greased 9” x 13” baking pan. Cover - refrigerate overnight.

Remove from refrigerator 30 minutes before baking.

Bake- uncovered 350° F. 65 to 70 minutes or until set ñ golden brown. Let rest 10 minutes before serving. Serve with salsa ñ tortillas.

Note~ Add * black olives –little cooked bacon with the sausage or ham-or whatever U like.

Any Morning Breakfast

Make the day before n pop in oven in the morning. Serves 8.

16 slices white bread, crusts removed

16 slices Canadian back bacon or ham

16 slices sharp cheddar cheese

6 eggs

1/2 tsp. pepper

½ to 1 tsp. dry mustard

1/4 cup minced onion

1/4 cup finely chopped green pepper

1-2 tsp. Worcestershire sauce

3 c. milk

dash Tabasco

1/2 c. butter

Special K or crushed Corn Flakes or rice krispies

Set 8 pieces bread into 9" x 13" buttered- glass baking dish. Cover bread with slices of back bacon. Lay slices of cheddar cheese on top of bacon -cover with remaining slices of bread to make it like a sandwich. Beat eggs ñ pepper in a bowl. Add to egg mixture -dry mustard- onion-green pepper- Worcestershire sauce- milk n Tabasco. Pour over sandwiches- cover - let stand in fridge overnight.

In morning- melt butter- pour over top. Cover with Special K or crushed Corn Flakes. Bake- uncovered 1 hour 350° F Let sit 10 minutes before serving. Serve this with fresh fruit ñ hot cinnamon rolls.
