Bourbon Balls 6 Dozen or Food Xmas Gifts

1 pkg. vanilla wafer cookies (crush in plastic bag or blender
1 c. chopped nuts any type  or make with different nuts
1/4 c. unsweetened cocoa
1) can 14 oz. sweetened condensed milk
1/4 c. bourbon  80% or more proof

Large bowl combine all ingredients- mix well -chill 1 hour.
Shape mix in small balls - roll in confectioners sugar and
place in small paper cups.

Place in holiday tins for gift giving. 
Makes about 6 dozen

How about some relishes for Xmas gifts of differnet relishes or homemade spreads?

Sweet Corn Relish Tangy Great on Chicken or Turkey

3 c. distilled white vinegar

3/4 c. water

1 c. sugar or use equal or splenda equal to 1 c. or taste

1½ T. yellow mustard seed

1 scant tablespoon celery seed

3/4 tsp. tumeric

1/2 tsp. red-pepper flakes

5 Turkish bay leaves

3/4 tsp. salt

2) 1 lb. bags frozen yellow sweet corn

2 yellow bell peppers finely diced

1½ c. onion finely chopped

1 c. celery finely chopped

Bring vinegar water- sugar- spices ñ salt to boil in large heavy pot. Add corn- peppers- onion ñ celery to brine mixture – simmer- uncovered until vegetables are crisp tender- 10 to 15 minutes. Spoon relish ñ brine into jars – cool- uncovered in refrigerator - 1 hour. Cover with lids ñ chill at least 2 days for flavors to develop.

A flavorful brine lends this pretty yellow relish an acidic kick. It’s the perfect contrast to the richness of turkey ñ gravy. Makes 10 cups

Notes~ Great for replacement of gravy ñ made with splenda or equal sugar.

~Lemon Cheesecake Balls Delicious

8 ozs. cream cheese softened

1) 6 oz. can frozen lemonade thawed

1 lb. confectioners’ sugar

1) 13½ oz. box graham cracker crumbs

1/4 c. finely chopped walnuts or any nuts of choice

Cream lemonade- cream cheese - sugar by hand. Add crumbs with nuts. Shape into small balls. Chill.

Makes about 50 cheesecake balls.

Great Xmas gift or for parties -all holidays -Anytime eating

Holiday Bread or Fruit Cake

Preheat oven 325° F.

2 c. sugar

1 c. butter

1/2 tsp. cloves

2 c. dates chopped

1/2 lb. raisins’

2 c. water hot

1 tsp. cinnamon

Pot in saucepan-all the ABOVE-boil 3-5 minutes-cool to room temperature. Than add the BELOW ingredients -mix well.

1 small jar maraschino cherries

1 small count dried orange peel

2 tsp. baking soda

1/2 tsp. salt

Grease n flour bread pans. Bake -1 ¼ hours-more or less depending on size of pans. When knife comes out clean,

Christmas Blondies

Makes 18

2 cups Bisquick

1 box light brown sugar

1 teaspoon vanilla

1 stick soft butter

4 eggs

1 cup coconut

1 cup chopped pecans

1 small jar red cherries chopped

1 small jar green cherries chopped

Preheat oven 350° F.

Beat butter till very soft- add eggs ñ sugar- beat again. Add Bisquick ñ vanilla stirring well. Then add chopped red ñ green cherrieswith 1 cup pecans plus 1 cup coconut until all is mixed well.

Bake45 minutes. Enjoy with chocolate- eggnog or coffee.

Give a mug with a picture of the family or children or grandchildren on the mug witha note with all the ingredients for this recipe n a bow on it.

Cake in the Mug

9 T. sugar-free hot chocolate powder mix

4 T self raising flour

1 egg

3 T. canola oil

3 T. water

small handful of chocolate chips (optional or add Nutabella spread in the middle YUM

Spray inside a coffee mug with cooking spray ( use a large soup mug.

Combine all the ingredients and mix in mug.

Cook in microwave 3 minutes.

The cake will rise out of the top of the mug while cooking and settle back down after it’s done. Let it rise.

This whole thing has about 200 calories but 1/2 of this is enough to eat -add a teaspoon of plain cocoa powder next time and skip the chocolate chips. Very rich.

Penuche Fudge

2 c. sugar

1 c. brown sugar packed

1 T. light corn syrup

2 c. heavy whipping cream

6 T. butter cut into 12 pieces

4 ozs. or 1 c. white chocolate coating chopped fine

1 tsp. vanilla

1 cup ground and toasted pecans, optional

Prepare an 8" x 8" square glass or metal baking dish spreading some butter.

Sides ñ bottom.

Use 3 qt. saucepan- mix sugar- brown sugar- corn syrup ñ whipping cream together -let sit about 10 minutes.

Medium high heat cook the above fudge until it starts to boil. Using candy thermometer attached to side of pan. Turn heat down some -if starts to boil too fast ñ if show signs of burning- turn heat down more. Stir often during cooking.

Cook until thermometer reads between 234 ° - 239 ° F. Takes a while

Fudge reaches 237 ° F. - turn off heat - place - butter pieces evenly on top.

Leaving thermometer in the fudge- while butter melts on it’s own melted ñ temperature starts to drop.

Remove thermometer -add white chocolate coating. Stir until coating is completely melted ñ fudge is smooth.

Add vanilla with chopped nuts.

Pour fudge into prepared pan - let sit until cool. Refrigerate until fudge is firm. Slice into squares when ready to serve. Keep chilled About 36 pieces

Icebox Fruit Cake

1 lb. graham crackers

1 can condensed milk

1 fresh coconut

1 box light raisins

1 qt. pecans

1 small pkg. cherries

2 small pkgs. pineapple

1 pkg. mixed fruit

2 sticks margarine

Crush graham crackers very fine. Melt margarine. In large bowl,

mix all ingredients. Line bottom of tube pan with waxed paper and

grease sides of pan with margarine. Mold into tube pan and pack.

Put in refrigerator for about 2 hours before you remove from pan.

After cake has been removed, you must keep refrigerated. If

covered, cake will keep for several weeks.

**This was delicious! Enjoy!

Another Xmas gift made ahead of time is the fruit cakes

Velveeta Fudge

1 lb. butter

1 lb. Velveeta cheese

4 lbs. sugar powdered

1 c. cocoa powdered

2 tsp. vanilla

1 dash salt

1 c. walnuts chopped

Melt cheese and margarine together in medium sized saucepan on

medium- low heat. Remove from heat and add vanilla. Mix well.

Mix powdered sugar and cocoa in a large mixing bowl until

blended well.

Add melted mixture to sugar/cocoa mixture and mix until

completely blended. Work nuts into dough, and spread evenly

in 2) 9"x13" pans.

Cool - cut into 1 inch squares. 1 squares

6 to 6 1/2 lbs. candy.

2 Ingredient Fudge

Your choice of chips and frostings.

1 bag of milk chocolate, white or any flavor chips (your

choice) 12 ounces

1 can of cake frosting (your choice)

Chopped Pecans if you like

Line an 8 by 8 inch pan with heavy foil, butter the foil.

Place the chocolate chips in a microwave safe dish. Spread the

chips over the bottom of the dish and cook for 30 seconds,

stir, microwave for another 30 seconds and stir and then

another 30 seconds if not melted. Then put the whole can of

frosting on top of the chips in the dish and microwave for 30 to

60 seconds. The frosting will be melted. Now stir and add 1/2

cup or more chopped pecans, cashews or walnuts if you wish.

Butter the foil in your 8 by 8 inch pan, spread melted

ingredients in pan . Place in fridg if you wish, not

neccessary, to harden. Cut into pieces.

This recipe is foolproof.

I used cream cheese frosting and milk chocolate chips and pecans

and then another batch with cashews.

Then I made a batch with Betty Crocker creamy coconut frosting

and white chips...DELICIOUS

After you have tried this once, the coconut-pecan frosting that

you use on a German Chocolate cake is great with white chocolate

chips, won’t set up as hard though.

How about some Homemade soup in a jar for a gift with a nice ribbon n card for Xmas or all the beans n seasoning with with a recipe -bow attached for a gift.
