Plummer’s Pumpkin Pie

1 large can pumpkin (not the 14 oz, one-pie size)
1 t clove
1 t allspice
1/2 t nutmeg
2 t cinnamon
1/2 t salt
1 C sugar
1/2 C brown sugar
4-6 eggs, slightly beaten
2 C evaporated milk
1 C whole milk


Combine all ingredients in a large bowl.
Mix with an electric mixer--about 3 minutes--until mixture is uniform.
Place in uncooked pie crust.
Bake at 425 for 15 minutes. Reduce heat to 350, and continue baking for about 40 minutes.
This recipe makes two pies.
