Lemon Squares

1 C all-purpose flour

1/2 C butter

1/4 C powdered sugar

1 C granulated sugar

2 t grated lemon peel, if desired

2 T lemon juice

1/2 t baking powder

1/4 t salt

2 eggs

powdered sugar for dusting

Preheat oven to 350 degrees.

Mix flour, butter, and powdered sugar.  Press into an ungreased square pan (8x8 or 9x9), building up to 1/2-inch edge.

Bake crust for 20 minutes.

Beat granulated sugar, lemon peel, lemon juice, baking powder, salt, and eggs, with an electric mixer on high speed until light and fluffy, about 3 minutes.

Pour mixture over hot crust.

Bake 25-30 minutes, or until no indentation remains when touched lightly.

Dust with powdered sugar.

Cut into 1 1/2 inch squares. Makes 25.
