~Crab Casserole

8 ozs. Philly cream cheese

1 T. milk or cream

6 1/2 ozs. crabmeat

2 tsp. onions mince

1/2 tsp. horseradish or ur taste

salt n pepper to taste

Lemon juice to taste

Drop hot sauce or more

drop of Worcestershire sauce

 

Mix all well-Pour into greased baking dish-sprinkle with favorite nuts crumbled

CHEESE ROLL

2 lb. Velveeta Cheese

1- 8 oz. Pkg. cream cheese, softened

1 small jar pimiento, juice and all

3 0r 4 big pods garlic (use garlic press)

½ c. chopped pecans

[Paprika]

Mix first 5 ingredients together (with hands) and form into 4 rolls. Roll in paprika (on waxed paper). Roll off of waxed paper onto foil. Wrap up foil and keep in freezer until ready to use.

(Work with one roll at a time or I guess you could make a cheese ball – Serve with Ritz Crackers)

Mushrooms with Beer Batter

10 oz. pkg. white mushrooms

Bisquick

Beer (any

salt

use some cayenne pepper(optional

garlic granular to taste

Panko Crumbs

Canola oil for frying

marinara sauce for dipping

Wash mushroom - dry well with stems on. Large bow add Bisquick about 1 1/2 cups to start with. I then pour in beer until like pancake batter consistency.

Take each mushroom with stems included -dip into beer batter roll in panko crumbs. Heat canola oil or peanut oil in deep pan -deep fryer or electric skillet.

Fry each breaded mushroom in canola oil until golden brown on all sides. Remove - set on paper towel lined platter. Serve with cocktail or marinara sauce or mustard sauce or use a nice soy sauce for dipping.

Note~ Use Tempura Batter n beer if U like also. Any seasonings Get creative.

Like to sometimes use sweet dried basil or some chives with this.

Mustar Lime Sauce

1/2 c. pineapple preserves

1/2 c. mustard mayonnaise blend (such as Dijonnaise

1 tsp. lime zest

1 T. fresh lime juice

1 T. chopped fresh cilantro

Stir together all ingredients in a small bowl.

Makes 1 cup.

Use on shrimp-crab balls-pretzels-veggie dips or a sandwich

Great Smoky Guacamole

3 ripe avocados cold n peeled

1 T. cilantro chopped fresh

3 T. lime juice fresh

3/4 tsp. garlic granular

1/4 to 3/4 cumin powder

1 T. chipotle chile hot sauce or to taste

1/2 tsp. salt or to taste

Garnish~ 1 small canned chipotle chile pepper in adobo sauce drained sliced OR USE sliced black olives

Cut avocados in half. Scoop out pulp into bowl- place in blender or mash with a fork until almost smooth. Fold in cilantro ñ rest of ingredients. Garnish with romo or plum diced tomatoes . Make 2 cups.

Beer Dip

2 pkgs. softened cream cheese

1)pkg. 1 oz. Ranch Dressing Dip mix

2 c. cheddar cheese shredded

1)12 oz. can beer any kind U like

Beat cream cheese ñ ranch dressing dip mix. Add cheese ñ beer. This is super good. Good with corn chips- pretzels- tortilla scoops chips- or whatever U like.

Horseradish Cheese Dip Really Tasty

Mix together

1)6 oz. bottle prepared horseradish (regular or hot

1)12 oz. container cheddar cheese

(used Wispride sharp cheddar or

port wine

Great with crackers- veggies or just about anything!

Jalapeño Ranch Creamy Dip

1 pkg. Hidden Valley Ranch

Dressing Mix

1 c. milk

1/2 c. mayo

1/2 c. sour cream

1 4 oz. can whole green chiles or

use fresh roasted seeded

3 T. cilantro leaves to taste

1 clove garlic

1/3 c. pickled jalapenos

Throw everything in blender or food processor - mix until creamy

Note~ sub sllchilies for red roasted-brought (drain well or fresh

Mustard Dip

1 c. sour cream

1 c. mayo

1 c. prepared mustard (Frenchs

1/2 c. sugar or less to UR taste

1/4 c. dried onion minced or use onion powder to taste

1 pkg. Ranch Dressing

1 T. prepared horseradish or to UR

taste

Sourdough pretzel nuggets or really great on Factory Savory Thin Flat Pretzels

Large bowl- combine 1st 7 ingredients. Cover- refrigerate 30 minutes or longer. Serve with pretzels- chips-any fried foods –raw veggies.

Note~ Great on sandwiches too.

Veggie Curry Dip

1 c. mayo

1 tsp. curry powder

1 tsp. garlic granular

1 tsp. onion minced fresh

1 tsp. tarragon vinegar

1/2 to 1 tsp. horseradish

Mix well-chill several hours. Nice bite

Velveeta Cream Cheese Roll

8 ozs. Philly cream cheese

2 lbs. Velvetta cheese

1-2 tsp. garlic granular

1 c. pecans chop

cayenne or red crushed pepper flakes or smoked paprika sprinkle

Mix 1st group well together-shape-into a roll-sprinkle

or roll cayenne or red crushed pepper flakes-wrap-chill several

hours.

Serve-sliced on platter with different crackers

Grilled or Bake Figs

Using skewers – thread fresh figs halves- wrapped with a small piece of prosciutto or black forest ham or serrano ham or thin bacon ñ tuck a fresh basil leaf in between fig ñ meat.

Drizzle little olive oil. Secure with a tooth pick. Do on a grill-medium heat 1 minute or so each side or in oven 425° F.

Slide off Skewers ñ drizzle small amount of balsamic vinegar on them while still warm.

Olive Bites

3) 8 oz. cream cheese- soften

dash of salt- white pepper ñ dill weed (or any other spice you like

1) 8 oz. pimento stuff queen sized olive- drained on paper towels

1) 8 oz. jalapeño stuffed olives drained on paper towels

2 c. nuts finely chopped

Combine cheeses with spices. Form cheese around olives –

then roll in nuts. Refrigerate. Slice in half and serve.

Powdered Sugar Philly Dip for Fruit Awesomely Delicious

½ block Philly Cream Cheese

about 1 cup or so powdered Sugar

1 to 2 T. milk

Use electric mixer –beat 2 minutes until fluffy

Great for strawberries –grapes-sliced apples-kiwi ñ mandarins’

With some veggies also

3 Different Dips Easy Quick Dips

Number 1 dip

1/2 c. cream cheese

1 c. sour cream

1 roasted red pepper

6-7 basil leaves

1 c. Asiago cheese.

Number 2 dip

1/2 c. sour cream

1/2 c. mayo

3 pieces of bacon fried n crumbled

1/4 c. sun dried tomatoes or use fresh diced plum or romas

1 T. oregano

Third Dip

1 large pitted n peeled avocado

2 T. lime juice

1 tsp. chiptole powder (regular or smoked style

Little Cilantro leaves diced

Garlic ñ onion powder to taste

Salt to taste

The instructions for all are the same~ Dump all ingredients in food processor and pulse until well blended. Salt and pepper to taste, or don’t.
