Crab Stuffed Cucumbers

English cucumber works best
1/4 c. crab fresh good stuff
1 tsp. lime zest
1 tsp. lime juice fresh
1 T. green onion  ñ some stems sliced fine
1/4 c. celery diced fine
1 T.  x virgin olive oil
Salt ñ  pepper to taste

Dash of red crushed pepper flakes

Cut cucumber crosswise into 1½ inch slices cut diagonally.
Scoop out centers using melon ball or small spoon making cucumber cups leaving ¼ inch walls. Salt cups lightly.

Small bowl combine crab- lime zest- lime juice- onion ñ stems- celery- oil- salt- pepper ñ red crushed pepper flakes. Fill cucumber cups- garnish with fresh herbs.

Note~ can add little sour cream with  mayo or use a remoulade sauce mixed with the crab.  Use cooked shrimp or lobster for a sub for crab.

Use Italian zucchinni or small summer squash in place of cucumbers.  Blanch zucchinni n squash first.

Stuffed Eggs with Shrimp

1/3 c. shrimp medium sized peeled deveined- cooked

½ to 1 tsp. Dijon mustard go slow taste after mixing

1 tsp. lemon juice fresh

6 large eggs boiled ñ peeled

salt ñ pepper to taste

2 T. mayonnaise or little more

Additional shrimp cooked to arrange around platter leave whole

2 T. sour cream

Chopped fresh chives-dill or basil fresh chopped or bacon or little jalapanos’ diced fine (optional

Finely chop shrimp - set aside. Halve eggs lengthwise - remove

yolks to a bowl. Mash yolks ñ mix in chopped cooked shrimp-add

mayonnaise- sour cream- mustard ñ lemon juice. Add salt ñ pepper to

taste. Fill egg whites with shrimp -yolk mixture. Garnish with additional

shrimp ñ fresh herbs or add fresh crisp fried bacon crumbled- if desired. Store covered in refrigerator.

Sometimes I dice finely a little seeded serrano peppers in there also.
