Cheese Ball Tree

1)  8 oz. pkg. Philly Cream Cheese softened

1 ) 7 oz. pkg. Mexican Four Cheese  shredded or any U like

2 T. Grey Poupon Dijon Mustard

2 T.  green chiles canned chopped or fresh chopped jalapeño’s dice fine

1/3 c. toasted  nuts UR choice

Crackers or use those Ritz Snowflake crackers

Almonds sliced thin ñ smoked

 

Using blender or food processor blend well  cheeses ñ mustard. Stir in diced drained or diced fresh seeded jalapeño’s or serrano’s chiles to taste.

Shape into 4” oval on sheet of waxed paper to resemble pinecone. Insert nuts in rows to completely cover cream cheese mixture. Remove to serving plate.

Chill 4 hours. Remove from refrigerator 15 minutes before serving. Let stand at room temperature to soften slightly. Serve with crackers.

Notes~serve with any crackers- chips- veggies. Add 1 tsp. hot pepper sauce to cream cheese mixture or use some smoked chipotle powder before shaping as directed.

Can store this cheese ball up to 5 days before serving wrapped in  refrigerator. Using a smoked cheese is good.

Add different herbs or seasonings ñ make several of these some without the  using mustard.  Place a plastic star on top made of carrot or with some other veggie ñ toothpick to hold in place.  Get creative.

Apple Nut Log

1) 8 oz. pkg. cream cheese softened

1 T. apple juice

¼ to ½ tsp. ground nutmeg

1 tsp. fresh lemon juice

1 c. tart apples chopped

1 c. nuts chopped

Cream together 1st three ingredients in a bowl-mix until smooth. Pour lemon juice over chopped apples ñ add to

creamed cheese mixture.

Gently fold in 3/4 cup of nuts- shape into a 6“ log ñ roll in remaining nuts.

Wrap in plastic ñ refrigerate until ready to serve.

Serve with assorted crackers or toasted pieces of bread.

Carrot Cheesecake Ball

1) 8 oz. pineapple can crushed

1/4 c. dry coconut flakes optional

1/2 c. carrots finely shredded

1/2 c. raisins

1) 8 oz. pkg. cream cheese

1/2 an 8 oz. pkg. light cream cheese (this is important for texture.

1/3 c. sugar

1/2 tsp. ginger (powdered works best here

1/2 tsp. nutmeg

1 tsp. cinnamon

1 tsp. vanilla

1 cup graham cracker crumbs

Drain small can crushed pineapple- soak up excess juice with paper towel. Set aside.

Mix dry ingredients - carrots ñ raisins. Mix pineapple- coconut- vanilla- ñ cream cheeses. Add dry ingredients- might prefer more sugar or splenda - form into ball ñ roll in graham cracker crumbs.

Serve with graham cracker- carrot sticks- or whatever might go with this

Cheese Ball with Sausage

3 c. Original Bisquick mix

1 lb. bulk pork sausage

1 lb. Cheddar cheese shredded

1/2 c. Romano or Parmesan cheese grated

1/2 c. milk

1/4 tsp. dried rosemary leaves crushed

1 ½ tsp. fresh parsley chopped or 1/2 tsp. parsley flakes

BBQ sauce or chili sauce

to 375ºF.

Heat oven to 350ºF or see notes~

Lightly grease bottom -sides of jelly roll pan-

15½” x 10½” x 2” x 1”.

Mix all ingredients using hands or spoon together. Shape mixture into 1 inch balls or preferred size. Place in pan.

Bake 20 to 25 minutes or until brown. Remove from pan. Serve warm with sauce for dipping.

Notes~ Heat oven notes to (375ºF higher elevations -decrease Bisquick to 2½ c.- stir in 1/2 c. all purpose flour. Bake 25 to 30 minutes.

Party Cheese Wreath

16 oz. cream cheese softened

8 oz. mild cheddar cheese or any U like shredded

dash red crushed pepper flakes or cayenne pepper

1 T. red bell pepper chopped

2 tsp. Worcestershire sauce

1 T. green onion finely chopped

1 tsp. lemon juice

Beat cream cheese ñ cheddar cheese with mixer on medium speed until well

blended. Add remaining ingredients. Refrigerate 4 hours or more. Place drinking

glass in center of a serving platter. Drop rounded tablespoons of mixture to

form a ring around glass- just touching the outer edge- smooth with spatula.

Remove glass. Garnish with fresh parsley n red pepper. Serve with crackers – toasted bread pieces-chips or corn chips

Note ~ add some roasted green chilies with this.

Pineapple Nut Cheese Ball

16 oz. cream cheese room temperature

1/4 c. green bell peppers finely chopped *

2 T. minced onion

1 T. season salt

2 c. nuts chopped

Blend all ingredients except 1 cup of the nuts. Form into a ball ñ chill. When firm- roll in remaining nuts. Chill several more hours -serve with crackers or toasted bread pieces or veggies.

Note~ Xmas time add red ñ green bell peppers for color.
