Fruit Cocktail Cake

posted in desserts [more from this topic] anonymously on Sunday, December 26th 2010 at 12:43 PM.

1- box spice cake ( makes two small layers of cake, 8 or 9 inch layers)
1-303 can fruit cocktail
1/2 cup brown sugar
1-can cream cheese frosting
chopped nuts (pecans or walnuts) for garnish

Make cake according to directions on box. Add fruit cocktail and brown sugar to cake batter.
I use the whole can of fruit cocktail but, it’s a very moist cake.
For a less moist cake, use have of the fruit cocktail and chop the fruit into smaller pieces.
After cake has cooled, ice with cream cheese, I usually only ice the top of both cakes then sprinkle with the nuts and serve.
