Ranchero Sauce ñ Scrambled Eggs Hj’s

4 tortillas  cut into squares or thin strips

1 or 2 T. olive  or canola oil

8 eggs
4 serranos  diced
1/2 c. plum or roma tomatoes mashed
1/4 onions medium mashed
Vegetable oil
Salt  to taste

Extra warmed tortillas

 

Cut tortillas in squares or strips tortillas - fry in vegetable oil. Drain on paper towels.

Heat skillet add 1 or 2 tablespoons oil - add  mashed onion -sauté till onion is transparent -add puree red tomatoes ñ chiles diced in little pieces- let sauce cook 10 or 15 minutes ~add a little amount of water if needed. Beat eggs ñ add to sauce- also add tortilla squares or strips.

Cook until done ñ serve. You can serve this with beans as a side dish n extra sauce to lay on top of eggs.

Note~ Make this a chunky ranchero sauce by making medium thin slices of sweet onions – still mashing garlic- diced tomatoes- touch of salt ñ touch of diced cilantro leaves ñ diced serranos or us jalapeños with some habañero diced ñ seeded ñ can add slices of red fresno peppers seeded – cook same way ñ make eggs over easy  ñ pour sauce over top with slices of avocado ñ fried bacon -sausages or ham with warmed tortillas on the side.

Sometimes  I add extra onion with fresno or anahiem o- bell peppers of different color  or roasted green chilies-sliced thin just to lay on top -top with chopped cilantro leaves

Tiny tiny tiny drop olive oil

Hunts tomato sauce

Added~

onion powder

Accent or touch of salt

black pepper as U like

Tuscon Herbs not much just a touch

Green chili seasonings tiny tiny pinch or use hot sauce

romano cheese grated

Stir ñ heat till little thick

Add eggs no salt nor pepper

Use skillet appropriate to amount of eggs making.

Add tomato sauce –medium heat –a tiny tiny drop of olive oil-add as much tomato sauce needed for amount of eggs cooking- (doesn’t take much-once U make this U’ll know exactly how much to use. Throw in all the rest ñ stir a minute or so add eggs ñ let them poach or cook- stir the sauce up ñ around the eggs –use lid to cover partially cooking eggs to UR likeness. DO NOT turn eggs. Have toast ready ñ eggs slip easily out of skillet ontop toast ñ use more sauce to pour around or over top. Outstanding. Guest yesterday wanted more this morning.

Serve over toast

Notes~ this is Italian sauce in the east as to similar ranchero sauce the west coast

So quick ñ easy to make U can make in seconds if not enough.
