Pollo Asada Hj’s Verison

 ~Marinade
1 c. white wine vinegar or use white vinegar
1 c. olive oil
1/2 c. white wine or use balsamic white wine
1 tsp. oregano or more
1 tsp. thyme (optional
1 tsp. cumin powder or more
Kosher salt to taste
1 tsp. turmeric or drop of yellow food coloring
2 to 3 garlic cloves minced
1½ tsps. hot sauce or use cayenne pepper to UR taste(sometimes I use  little chipotle powder
Cilantro  handful chopped


2) whole chickens cut totally in half

 

Using a large oblong container (glass casserole dishes work well-add in all marinate  ingredients ñ mix well  ñ  add 2 whole  chickens cut  totally in half.

Marinate  4 hours  to overnight  in refrigerator-covered –turning often. Grill chickens slowly until done nice ñ golden. serves 4

 

Notes~ Here again get creative ñ use what herbs U like.  The turmeric or yellow flood coloring gives the chicken that deep yellow coloring.

Some times I use chili powder  more garlic – squeeze limes or lemons all over either in marinate or when grilling or baking these.  The grill makes these so good.

Find how U ñ family or friends enjoy the juicy tender chickens.  Experiment

Mistakes are a great creation sometimes.

Here is another marinade for chicken or Turkey-rabbit or squirrel .

Grill or Bake

Marinade for Chicken with some Tequila ñ Liquid Smoke

1 c. water

1/3 c. teriyaki sauce

3 garlic cloves minced

2 T. lime juice fresh

1 tsp. Mesquite Liquid Smoke

1/2 tsp. salt

1/4 tsp. gr. ginger

1/4 tsp. tequila

Chicken parts or breasts

Mix well in zip lock bag or container -place chicken in cover or zip - chill up to overnight.

Grill or bake.

Used this on rabbit or squirrel on the grill also.

If doing rabbit. Do a young rabbit placed in salted water for 24 hours - makes it more tender.

Older rabbits or squirrel stew.
