Greek Pizza

1)10 “pre-baked pizza crust thin style (homemade or store-bought
Sprinkle lightly salt on top of crust
1/2 c. mayonnaise with extra virgin olive oil*
2 garlic cloves finely chopped
1/2 c. white cheese mild grated* see suggestions
2 T. romano cheese grated
1/2 tsp. dried oregano leaves crushed
1 c. cherry tomatoes halved or use roma or plum sliced thin
2 c. baby spinach leaves
1/2 c. pecorino or parmigiano reggiano cheese grated
1/2 red onion small thinly sliced
1/2 c. feta cheese
Preheat oven 450° F.
Small bowl- combine *mayonnaise- garlic-romano cheese ñ oregano.
On cookie sheet- arrange pizza crust- sprinkled lightly with salt- -Spread with mayonnaise mixture- add *grated white melting cheese top with tomatoes ñ *olives –top with pecorino cheese. Bake 12 minutes or until tomatoes are soft.
Top with spinach- onion ñ feta. Bake 5 more minutes- or until cheese is melted.
Hj’s Note~
I use real mayo ñ drizzle lightly some quality olive oil in place of mayo olive oil- suggestions for white cheeses to use – mascarpone –Asiago-queso quesadilla or provolone or any American white cheddar.
Let one cheese off if U think there is too much cheese
Olives- use choice of black- green or kalamata olives sliced
If U think too much cheese- leave one off.
