Seafood Lasagna with Chorizo ñ Beef ñ Hj’s Chorizo

Olive oil to taste
1 to 2 garlic cloves minced
1 shallot chopped
1 bay leaf   large remove after cooking 
1 sprig fresh thyme or couple fresh basils leaves
1/2 c. white wine
1 qt. heavy cream
1 lb. roasted tomatillos remove husk puree
Salt ñ white pepper or black cracked to taste

Filling~
Olive oil to taste ñ little butter
1 lb. shrimp 24 to 26 count   de-veined no tails
2 garlic cloves minced
1 lb. bay scallops
1 lb. chorizo sausage *notes
1 lb. crab claws
2 poblano peppers roasted deseeded

1)16 oz. pkg. lasagna noodles FLAT or homemade thin flat
Shredded cheese cheddar or mozzarella shredded as much cheese to UR liking

Sauce~
Heat large sauté pan- add ñ drizzle olive oil with garlic ñ shallots. Sauté until shallots tender-add bay leaf ñ thyme or basil. Sauté 20 seconds- add wine - reduce until almost gone. Mixture will turn thick. Add cream with tomatillo purée - reduce by half. Add salt ñ white pepper or cracked black pepper

Filling~ Heat another pan -  drizzle olive oil with little butter - add shrimp. Sauté until shrimp just starts to turn pink. Add garlic –sauté 20 seconds. Add scallops - season salt ñ pepper. Cook now until shrimp are bright pink. Remove from heat - set aside. In another pan- cook *chorizo on medium heat until light brown. Remove meat from crab claws.

Preheat oven 350 F.

Lasagna~
Using baking pan or dish-add a ladle of sauce- a layer flat thin lasagna noodles. Place some shredded cheese-sprinkle of roasted poblanos- layer of shrimp -scallop mixture with layer of crab-ladle more sauce. Continue layering until U run out of ingredients. Top with remaining sauce- cheese ñ *chorizo. Bake 45 minutes. 8 servings.

Notes~ Use gr. beef with about 1 inch pepperoni stick (remove skin- chopped up fine if U don’t like chorizo
If you want a little chorizo taste instead of using pepperoni stick with beef use DRIED CHORIZO n chop fine. Works well also.

**Can use  one layer of ricotta cheese or a good quality of 100% goat’s milk Queso cheese ñ top with mozzarella . When use ricotta or Queso (the one layer cheese I add salt-pepper-little lemon  juice ñ zest –dash of basil ñ mix well ñ top with either mozzarella or cheddar.

Chorizo Hj’s

1 lb. gr. pork lean

1/2 lb. gr. beef 93 %
2 to 3 garlic cloves mince fine
1/2 to 1½ tsp. crushed red pepper more for hotter or cayenne pepper

2 or 3 T. cumin powder

2 or 3 T. chili powder
1/2 to 1½ tsp. cinnamon

1/2 tsp. gr. cloves
1¼ tsp. salt  or UR taste
1 tsp. coriander
1 to 2 tsp. Mexican oregano powder  UR taste

1/2 hand-full cilantro leaves chop fine 

Mix well together- Place in zip loc bags for freezing or use right away.

Will keep in fridge up to 4 days- freezes very well months.

All those little interruptions of garble-gnook nonsense that "SOMEONE" enjoys posting as to make one belief there might be a reference site to more recipes. They are gone now. :)

Evidently -it is the labor of an unhinged- volatile- erratic- deranged- malicious- scoundrel- who is clearly very malicious with low self esteem-since they posted so many in such a short period of time or every so many hours apart..

This gremlin- deliberately impedes others enjoyments. Stooping so low- to destroy ñ encumber Tx. Monthly with such gobbledygook. Ignore them if U so choose to - the links go no where

I sorry if I confused you also...I was talking about the recipes that are posted in what looks like another language. There were several posted after your recipe and then yesterday they were removed.

Are U not reading the title of the post and recipe in full? The asterisk in the ingredient line of first recipe listed chorizo and see (*Notes) after. Means ... see notes. Everyone knows that.

The recipe after the recipe is how I make homemade chorizo for those who like to make their chorizo and not buy it. If you like I can post it separately in the meat category.

I could’ve made another post but since we are using chorizo in the recipe and the title stated both recipes were in the posting - anyone can still find it by doing a search. Sorry -it confused you.
