Crisp Cauliflower Pizza Crust Topped with Cheese -Healthier

~Crust

1 c. cauliflower steam ñ grated

1/2 c. mozzarella cheese shredded light* divided

1 egg or egg beater equal to 1 egg

Cooking Spray for Pan (Crisco or Pam

Topping~

1/2 tsp. oregano

2 tsp. basil

garlic granular to taste sprinkled over

2 tsp. parsley   optional

1/2 tsp. fennel power

1 green pepper or jalapeño slice very thin strips

1 onion or green onions ñ some stems

1 tomato sliced extremely thin

Chop peppers- onion- ñ slice tomato. Set aside. Steam cauliflower- let it cool ñ grate it into a large bowl.

Combine grated cauliflower with1/2 the mozzarella* ñ egg in bowl. Spray a circular or rectangular metal pan with cooking spray before spreading the base for pizza crust evenly. Sprinkle cauliflower base crust  evenly over pan with all seasonings.

Bake 450° F. 12-15 minutes. Remove cauliflower pizza crust from oven – Top with thin tomato –peppers ñ *whatever else U use with remaining mozzarella ñ romano cheese maybe some fresh spinach also if U like. Season with salt ñ pepper ñ more of the other herbs again if U like.

Return pizza to oven. Turn heat up to BROIL - leave pizza in until the cheese has melted ñ crust is crispy. Watch it closely.

Notes~ with * Add little romano cheese with the crust ñ mozzarella ñ AGAIN with remaining mozzarella.

ADD some very thinly sliced mushrooms for topping -add fresh spinach leaves or get creative. Black olives or other veggies ñ some meat like chicken-bacon or Canadian bacon can be added (not much meat –will be to heavy to hold on the crisp.

After crust bakes -add little tomato sauce to crust before adding other ingredients.

This is meant to be healthier way of pizza –with just ingredients 1st ingredients listed- but we all know we like to add or change ingredients if we can  to improve or to our own personal taste.
