Jalapeno Basmati Rice

1 c. basmati rice   rinsed well

1/2 white onion  chopped

1 jalapeño medium  seeded  chopped

1 to 2 garlic cloves minced

1 tsp. butter

1 T. olive oil

2 c. chicken stock

 

 

Preheat oven 350 ° F.

Melt butter in medium sauté pan, add olive oil.

When oil is warm, add rice, onion, pepper, and garlic.

Sauté 2 to 3 minutes or until rice browns slightly.

Pour in chicken stock, stir and pour into 1½ quart baking dish that has been sprayed with non-stick cooking spray.

Cover-bake 25 to 30 minutes or until water is absorbed -rice is tender.
