Penne Arrabbiata Buca di Beppo

3 links spicy Italian sausage
16 oz. jar marinara sauce
1 teaspoon crushed red pepper
1/2 lb. penne pasta noodles
2 tablespoons salt
1/4 cup romano cheese grated
1 teaspoon Italian parsley chopped

Boil sausage in water 20 minutes or until cooked thoroughly.

Let sausage cool (this can be done ahead of time or night before.

Cut one link into 6 pieces - chop finely in a food processor or with a knife.

Pre-heat oven 450 ° F.

Bring a pot of water with salt -at least one gallon to a boil.

Place 2 remaining links of sausage in a small baking dish in oven to brown.

Drop pasta into the boiling water - follow cooking instructions on the box stirring often.

Pour marinara sauce into a large sauté pan. Add chopped sausage - crushed red pepper - bring to a simmer  on medium high heat. Stir sauce so it does not burn.

When pasta is al dente –drain in colander. Do not rinse.

Add hot pasta to sauce - toss completely.

Mix in Romano cheese- set aside a small amount to top completed dish.

Place tossed pasta on a large serving platter.

Remove sausages from oven - slice on an angle in 6 to 8 pieces per link.

Place sausage neatly over the top - serve with warm hot home made Italian Bread.
