Stuffed Crab in Jumbo Shrimp Baked or Fried

12 jumbo shrimp
1) 6 ½ ozs. can crabmeat drained or use quality crab or use more crab
1/4 c. seafood cocktail sauce~(I make my own Sauce
1/4 c. roasted red pepper finely diced or red bell
2 T. seasoned Panko bread crumbs *
3 drops red pepper sauce
1/4 tsp. white pepper or use black
paprika regular or smoked sprinkle on as garnish or use smoked chiptole powder seasoning
Seve extra lemon wedges also or limes
Clean devein shrimp- pat dry-butterfly shrimp (DO NOT cut through.
Mix all other ingredients in a bowl together
Spoon 1 tablespoon or more of crab mixture into shrimp ñ secure with tooth picks.
Lay in a greased baking dish.
Sprinkle with paprika.
Preheated oven 375 ° F. – bake 12 to 15 minutes or fry with lightly coated batter of egg ñ mayo beaten well ñ dip stuffed shrimp into ñ than into seasoned either Panko bread crumbs or seasoned flour.
Serve with additional cocktail sauce. Make sure the oil is hot each time ñ fry till golden turning or use deep fryer in 365 or 370 ° F.
Note~ Have add some shredded Pepper Jack cheese to crab mixture or can use smoked cheese or any U like. *Or add some jalapeño or serrano’s diced to crab~ Oh that is delicious. I make huge ones ñ stuff them well ñ coat. Don’t want a heavy batter can serve with lemon wedges also.
U don’t have to add the cocktail sauce to the crab or use that much sauce if U do. Up to U.
After U make it a time or two U will find what U like best. Make a main meal of this with a great salad or balsamic rice on the side.
