For James Con Queso with Fire

James this is not Siesta’s con queso but U might enjoy this recipe.
2 T. butter1 white onion finely chopped2 ripe tomatoes large finely chopped with their juices2 poblano or Anaheim chiles roasted finely chopped1 jalapeño chile seeded minced1/2 tsp, saltPinch cayenne pepper6 ozs, Monterey Jack Cheese grated6 ozs. Sharp Cheddar Cheese grated3/4 c. heavy cream or half ñ half
Melt butter in large skillet ñ add onion- cook until translucent- about 5 minutes-stir often. Add tomatoes ñ their juices- chiles- salt ñ cayenne pepper. Reduce heat to simmer 15 minutes.
Stir in grated cheeses- continue to stir until starts to melt. Slowly add cream ñ cook 10 minutes longer- stirring often. Taste ñ adjust seasonings with salt ñ cayenne pepper. Serve in a hot chafing dish. 3 cups.
