Romantic Meals or Anytime

 Winning White Clam Sauce Hj’s

Cut this down for two or freeze the rest

3) 8 oz. cans minced clams  or costco
large can with little broth from it * see notes

olive oil  ñ lots   with butter ½ stick

1 garlic clove minced   or lots of
onion  ñ green tops or onion granular

3/4 c. parsley chopped  optional  1 stalk celery of chopped

2 T. white wine (optional or use red wine or ¼ bottle of champagne

1 tsp. basil   or lots fresh

1/2 tsp. salt

Little red crushed pepper flakes

Love fresh spinach in here also leaves OPTIONal

Fresh lemon squeezed into 1 medium ñ little lemon zest

Linguine if using for this dish

Garnish with fresh chives or parsley

Serve with lots of fresh romano cheese grated over
top  YUM



 

Start linguine if using in boiling salted water

Drain juice from clams- reserving juice. In 2 quart
saucepan over medium heat- in hot oil- sauté garlic until tender. Stir in reserved clam juice ñ remaining ingredients except clams- simmer 10 minutes-stir often. Stir in drained clam-cook sauce just until clams are heated through.

Pour over cooked al dente linguine ñ add garnish.

Note~ can add fresh asparagus tips to the white clam sauce ñ some fresh squeezed lemon over the linguine before add the sauce or use *Shrimp or Crab in place of clams or mix them up


Mske a roux to thicken if U like I really never
measure I just go with it ñ know.

Serve with Champagne -salad n chocolate covered strawberries as dessert.

It was brought to my attention about the celery, The parsley is optional the celery IS NOT OPTIONAL n in fact can add about 2 stalks with that much clams n use more celery leaves diced fine. The other night made this for my company n add fresh grated romano cheese when I served it. With warm crusty bread ..
