Carne Guisada or Beef Stew

2 lbs. round steak cut into 1” chunks
4 T. flour or use 1 T. masa hernia ñ 3 T. flour
2 T. vegetable oil
1/2 white onion sliced
1 tsp. garlic granular
1 bay leaf
3 tomatoes medium chopped
1/2 c. cilantro leaves chopped
2 poblano chiles roasted- peeled- seeded-
cut into ¼” strips- or 4 serrano chiles chopped (or fewer for a milder dish
1 c. beef broth
1 tsp. sea salt or kosher to taste
Serve with refried beans rice
Warmed flour tortillas
Dredge meat chunks in flour coating well. Using 12” deep skillet or or Dutch oven- heat oil medium heat ñ brown meat well all over stirring often- about 6 to 10 minutes. Add onion- tomatoes- cilantro ñ chiles – sauté 3 to 4 minutes. Add beef broth- reduce heat to simmer- cover 1 to 1 ½ hours or until beef is tender ñ mixture has cooked down to a thick sauce. Add salt. Remove bay leaf. Serve in individual serving bowls with Frijoles or thicken more for tacos or burritos.
Serve with refried beans -rice ñ warm flour tortillas.
