posted in general [more from this topic] by Hj on Monday, March 19th 2012 at 8:35 PM.

Any Seafood, Tri-Tip Squashes with  Peppers Hj’s

Olive oil ñ butter

White firm fish from cod to halibut -scallops

Zucchini all squashes cut julienne style or chop bite size

Summer squash

Calabasita squash

Garlic ñ onion powder to taste

1/2 to 1 whole lime fresh juiced to taste

salt n pepper to taste at the very end

Use large skillet- heat very little olive oil with butter - add sliced tri tip or seafood with all chopped squashes n serrano to UR taste- with garlic n onion granular - cook -stir add fresh lime juice -stir till just cooked n tender.

Add salt with pepper to taste ..Have a salad ready- finished in less than 20 minutes and very healthy n delicious.

Do not over cook any tri tip strips or scallops or shrimp

I added a touch more butter towards the end.

Note~ can use chicken cut up  n can replace serrano with jalapeno or roasted green chiles.

The sweetness from the Mexican squash n lime sets this off. I came up with this when I was in a hurry n  had company drop in.
