it is a toss up between lamb or ham this year. Here is a lamb recipe Mint ñ Lemon Sprinkle for Ham or Lamb Hj’s 1/2 c. mint fresh snipped chop 1 T. lemon zest 2 garlic cloves minced Combine mint- lemon ñ garlic ñ see below. For extra goodness add some honey to it all with a touch of oregano for the lamb shoulder. Bake as usual. Ham n Glaze Hj’s Score the ham into diamonds on the fat side ñ place whole cloves all over. 10 to 15 lb. Ham small bone 1¼ c. packed brown sugar 1/3 c. pineapple juice 1/3 c. honey 1/3 large orange juiced use some zest (optional 2 T. Dijon mustard Use small saucepan to combine all the above. Bring to a boil- reduce heat- simmer 5 to 10 minutes. Set aside. Last 40 minutes of baking. Brush glaze all over ham –basting about every 10 minutes.. Sometimes I use a precooked smoked Ham Micro Wave than in oven than pour ginger ale ñ Andre Extra Dry champagne all over it. Mix half ginger ale with half champagne. OR This new one I found from a chef Roasted Ham With Spicy Orange Glaze Orange Glaze Spicy ñ Roasted Ham Courtesy of~ Chef Jennifer Russo 1 cup orange marmalade 1/3 cup prepared cream-style horseradish sauce 1/4 cup brown sugar 12 to 15 lbs. smoked ham bone-in 1 cup water 2 cups orange juice 4 to 6 cinnamon sticks Grilled oranges, optional, as garnish Preheat oven to 375 ° F. Blend marmalade, horseradish and brown sugar in a medium bowl. Place ham in a large roasting pan. Pour water and orange juice into the bottom of the pan. Surround ham with cinnamon sticks. Brush ham with half the marmalade mixture, reserving other half. Cover ham loosely with foil, roast in oven 1 hour. Remove foil and brush ham with remaining marmalade mixture. Return ham to oven without the foil. Roast ham 20 minutes. Transfer half the ham to serving platter and garnish with cinnamon sticks and grilled oranges.
