Crunchy Fried Chicken with Buttermilk

1½ T. kosher salt divided

Pepper coarse to UR liking

1/8 tsp. cayenne pepper or to UR liking Optional

1½ tsp. paprika

½ tsp. to 1 tsp. garlic granular

1 tsp. to 1 tsp. baking powder

1/2 tsp. onion powder

1 tsp. saffron threads

3 to 4 lbs. chicken cut into pieces remove backbone ñ wing tips

1 c. buttermilk

1 egg large

1/2 c. chicken broth or use water

3 c. flour

1 T. cornstarch

Peanut oil or another high cooking oil like coconut oil
also or bacon fat or duck fat is really good.

In a bowl that will hold all the cut up chicken -whisk
well  with 1 T. salt  ñ with next seven ingredients. Cover ñ chill overnight ñ turn or put in zip lock bag ñ turn serveral times before frying. Fry till cooked through - golden brown
