Long John Silver’s Fish Batter

3/4 cup flour

2 tablespoon cornstarch

1/4 teaspoon baking soda

1/4 teaspoon baking power

1/4 teaspoon salt

3/4 cup water

Stir the dry ingredients together and then add the water.  Let sit for about 5 minutes.  This can coat fish or chicken.    Deep fry until a golden brown.

tagged: this recipe was on the net in 2002. i used it last night to coat soft shell crab. the crab came out golden brown and crisp.

Combine remaining ingredients and then add to the stiff egg whites. Coat fish in the batter and then deep fry! Its fantastic Makes 2 cups batter or this one 3 c. soybean oil 2 lbs. fresh cod fillets 1 1/3 c. self rising flour 1 c. water 1 egg 2 tsp. granulated sugar 2 tsp. salt or Batter Mix Long John Silver 2/3 C. club soda 1/3 C. lemon juice 1 egg 1/2 C. Bisquick 1/2 C. self-rising flour Beat all ingredients together until smooth- let stand 10 minutes. Heat oil to 385ºF. In small bowl put 1/2 cup club soda, in another 1/2 cup self-rising flour. Dip fish first into soda, then into flour. Set fish on cookie sheet till all the fish has been coated; let dry a few minutes. Dip fish in batter, let excess drip off; and deep fry 3 or 4 minutes per side. Shrimp can be done the same way if peeled and deveined first.
