Hj’s Grilled Chicken Marinaded over Mesquite Coals

Ok,  this is an outstanding great tasting dish.

I will give U how I marinade my chicken grilled over Mesquite coals.

Marinade for at least 4 hours.  Can be up to 8 hours or over night ..  This chicken is moist great tasting n  I use whole chickens cut in half n grilled about 12 inches above the coals on grate.

Marinate

slices of onions than place halved chicken with U seasoning both sides and I use 2 different one I make the seasoning. Please I won’t give those seasonings out .  but than place more slices of onion over top n some kosher salt.

Use about 1/3 c. Real lemon juice over all n cover.

 

After U have marinated  chicken.  Make sure the grate is sprayed with little oil n place chicken on hot coals.

Turn often n cook till done.  I sprinkle again just before adding to the grill  my seasonings.

Serve with cooked corm n any rice or potato salad or whatever U like.

This is so moist , and tasty with the skin cooked perfect.

Best moist chicken and flavor was right on. White meat was extremely moist. Grilled severalchickens and some was spicer and others we made milder for kids. Thanks so much.

Forgot.. I make avacoda - jalapeno dip to go with this or U can use UR salsa. Enjoy
