Pollo Asado with Lime in Tomato Sauce

2 lbs. chicken cut into serving pieces

1/4 c. lemon juice   fresh or use Real Lemon

2 Tbsps. soy sauce

1/4 c. butter

1½ c. tomato sauce

1 large onion  diced

2 bay leaves large

2 large potatoes quartered

2 tsp. salt

1/2 tsp.  ground black pepper

3/4 c. cooking oil

Rub salt with pepper mixed together into chicken ñ let stand 30 minutes or so.

Large skillet ñ heat with cooking oil ñ fry chicken – set aside or move to a platter.

Use another large skillet ñ add butter OR drain most grease out of first skillet ñ use it- add onions - sauté till soft. Throw in bay leaves- cook about minute or so. Pour in tomato sauce -bring to boil.

Add soy sauce with lemon juice - stir well ñ simmer 5 to 7 minutes.

Add cooked chicken - simmer 10 minutes.

Add potatoes in ñ simmer 7 to 12 minutes. Remove to serving plate ñ serve.
