Egg in a Hole (February 2000)

Homey Breakfast recipe from Austin Java Company, Austin

1 thick slice good-quality bread, your choice
1 pat butter, melted
1 egg

Brush bread with melted butter on both sides and cut a hole about 2 1/2 inches in diameter in the center of each slice. Put the bread in a large skillet over medium heat, break an egg into the hole, and cook until done, turning once. You may also fry the “hole” at the same time; children love them.
