Orange-Zest Biscuits (August 2002)

2 cups flour
4 tablespoons sugar
1/2 teaspoon salt
2 1/2 teaspoons baking powder
5 tablespoons vegetable shortening
zest of 1 orange, grated or finely chopped
1/2 cup milk
1/2 cup orange juice
Preheat oven to 425 degrees. Sift dry ingredients together. Cut in shortening and then stir in orange zest. Combine milk and orange juice, add to flour mixture, and stir with a fork until dough is fairly free from sides of bowl, no more than half a minute. Pat dough out 3/4 inch thick on a lightly floured surface and cut with a 2-inch biscuit cutter. Bake until golden brown, about 15 minutes. Makes about 16.![]()
