If you’re feeling crazy you could have only desserts, one of which should be the malted blondie, chewy and topped with a singed marshmallow. But sensible eaters would start with a vibrant, Asian-influenced salad of mint and bits of sausage, crunchy with toasted rice and topped with deep-fried crawfish. They might then move on to slices of raw steelhead trout garnished with shards of lentil pappadum and cilantro cream.
