It’s not often you see a vintage 1940’s New York diner plopped down next to a Texas pasture. But there’s nothing ordinary about the Hullabaloo. Dining here is basically a Northeast meets Texas experience, in a throwback sort of way. The Philadelphia-born chef makes a mean Philly cheese-steak, juicy and flavorful. Or you can opt for the Texas standby, a chicken-fried steak. With breakfast served all day, we chose what we thought would be a light meal: a serving of pancakes. We couldn’t have been more mistaken. They were the kind of dense, plate-size flapjacks that you make at a cook-out—delicious, but enough for several meals. For dessert, try a slice of Carnegie Deli cheesecake (if you have room).
