Not much changes here, and that’s for the best. Why mess with those crisply fried catfish filets or the Texas Toothpicks: slivers of fried jalapeño and onions best chased with a cold beer. Time slows down when you’re on the bayou, all the better to get the full flavor of the back country. (4/13)
