An unlikely pairing of Gruyère biscuits and maple butter was a lovely mix of sweet and savory, while grilled diver scallops trended Asian, with a kabocha squash sauce sparked with sriracha and Chinese long beans. The best dish of the night was a warm apple muffin (they called it cake) with a small scoop of sea salt caramel gelato.
